Do You Need a Favorite Hash Brown Potato Casserole?
Welcome to Friday! On this Friday before the next celebration, I thought I needed to share this recipe. Long, long ago…when my husband and I first met…his mother who was an amazing cook had an amazing hash brown potato casserole. At any family gathering this favorite recipe would be on the menu. Do you have a favorite hash brown casserole? Perhaps you just need one, right for the next family event–Mother’s Day, Memorial Day, Graduations, Birthdays??? I’ve got you!
Here’s the original recipe that was given to me. My mother in law actually used southern style frozen hash browns that were the little cubes. Through the years our family has preferred the shredded frozen hash browns when I couldn’t find the southern style one year…and so the recipe has evolved.
I have also made a few changes to the recipe through the years…more hash browns, less butter…you know when you need to try to make it work a bit better but still not lose the original, right?

My brother and his wife did just that when they arrived this week. When I asked what would they love for me to prepare???
Yep, you guessed it. THE potato casserole.
This recipe never fails to please. That’s what I want in my recipe collection…how about you?
My niece texted a few months ago asking for the recipe.
When my husband’s family gathered– that I shared in this post— their “mama’s potato casserole recipe took center stage.
If my nieces or nephews are in…or my boys…or my siblings…it has to be on the menu.
Then there have been times, like Easter, when my niece has taken photos of the casserole and sent it to her brothers JUST to let them know what they are missing!
I am certain that this side dish has been on the menu for other postings and holidays…but it has never gotten it’s showcase sharing of a dedicated post.
I’ve shared many other favorite side dishes here like the green bean bundles, broccoli casserole, breaded tomatoes and potato salad…but, none are as beloved as this recipe.
So, without further adieu…May I present the FAVORITE Hash Brown Potato Casserole from the Watkins’ recipe collection.
Hash Brown Potato Casserole
Equipment
- Stove
- 1 cutting board
- 1 chef's knife
- 1 Large Mixing Bowl
- 1 can opener
- 1 Skillet
- 1 Silicone Scraper
- 1 saucepan
- 1 9 x 13 baking dish
Ingredients
- 2 lb shredded hashbrowns you may used Southern Style diced, but we like the shredded better
- 1/2 C chopped sweet onion
- 1 stick butter
- 1 can cream of chicken soup
- 1 8 oz sour cream enough to make it creamy
- 2 C grated cheddar cheese
- 1 C corn flake crumbs
- 4 T butter
- salt and pepper
Instructions
- Preheat oven to 350°.
- Chop onion finely and add to a skillet with one stick of salted butter and saute.
- Butter or spray 9 x 13 baking dish with nonstick spray and set aside.
- In a large bowl, add hash brown potatoes TIP: I just soften in the microwave so that it mixes well before adding to the bowl.
- Add onions with butter, sour cream, soup, cheese and mix together well.
- Add to the baking dish and spread evenly.
- Add 4 T salted butter to a saucepan and heat until just melted.
- TIP: You can buy corn flake crumbs or place corn flakes into a large ziploc and roll with a rolling pin to make crumbs if you prefer.
- Remove pan from heat and add corn flakes to the butter and mix together well to coat.
- Top the potato casserole with the corn flake mixture.
- Bake in preheated 350° oven for 1-1/2 hours until lightly browned and potatoes are cooked.
- TIP: I often make the casserole recipe the day before a gathering and store covered in the refrigerator until I am ready bake the next day. Before baking, remove cover.
