2lbshredded hashbrownsyou may used Southern Style diced, but we like the shredded better
1/2Cchopped sweet onion
1 stickbutter
1cancream of chicken soup
1 8 ozsour creamenough to make it creamy
2Cgrated cheddar cheese
1Ccorn flake crumbs
4Tbutter
salt and pepper
Instructions
Preheat oven to 350°.
Chop onion finely and add to a skillet with one stick of salted butter and saute.
Butter or spray 9 x 13 baking dish with nonstick spray and set aside.
In a large bowl, add hash brown potatoes TIP: I just soften in the microwave so that it mixes well before adding to the bowl.
Add onions with butter, sour cream, soup, cheese and mix together well.
Add to the baking dish and spread evenly.
Add 4 T salted butter to a saucepan and heat until just melted.
TIP: You can buy corn flake crumbs or place corn flakes into a large ziploc and roll with a rolling pin to make crumbs if you prefer.
Remove pan from heat and add corn flakes to the butter and mix together well to coat.
Top the potato casserole with the corn flake mixture.
Bake in preheated 350° oven for 1-1/2 hours until lightly browned and potatoes are cooked.
TIP: I often make the casserole recipe the day before a gathering and store covered in the refrigerator until I am ready bake the next day. Before baking, remove cover.
