The BEST Loaded Smashed Potatoes
Do you love loaded potatoes? Smashed potatoes? How about both loaded AND smashed potatoes together? I’ve followed along with many Pinterest recipes for both. Today curiosity took the better of my need to combine the goodness of smashed loaded potatoes. Oh, my, were they wonderful!
If you have followed along, you know that every recipe has to become my version. I’m sure you may delete ingredients you don’t care for and add new ones that you love. That’s what happened with this recipe.
Never met a potato I didn’t love.
Are you that way, too? Potato casserole has to be front and center for family celebrations at everyone’s request. Potato salad has to be added to picnics and summer get togethers. Even sweet potato gratin has its place of honor at our home.
But, this recipe for loaded smashed potatoes was so delicious that it has already been added to the favorites list.
What I love about this is that you can make individual servings for large gatherings and prepare the “loaded” topping ahead of time for an easy crisp potato that’s a perfect side to go with grilled favorites, a great baked ham, pork chops or meatloaf.
Yukon potatoes are some of my favorite type of potatoes and these work perfectly for this dish. They offer a creamy and fluffy inside for this recipe and still give them a crispy exterior when roasting them.
Boiling them before smashing and roasting is key. You choose how you want to roast them with which seasoning, which allows it to fit the tastes within your family. Likewise, a great topping with sour cream, cheese and your favorite seasonings for a loaded potato make these loaded smashed potatoes over the top! Sprinkle with bacon and you have a true winner that will be requested time and time again.

Loaded Smashed Potato Recipe
Loaded Smashed Potatoes
Equipment
- 1 dutch oven
- 1 Stove
- 1 Baking sheet with sides
- 1 jar or glass
- Measuring cups/spoons
Ingredients
- 8 Small Yukon potatoes
- 4 T butter, melted
- 2 T olive oil I love to use olive oil sprayer
- salt and pepper, to taste
- 1/2 slice bacon per potato, cooked and crumbled topping
Loaded Potato Dip
- 1 8 oz. sour cream
- 1 clove garlic, finely minced
- 2 green onions, finely diced
- 1/2 C Cheddar Cheese, grated
- 1/4 t garlic salt
- 1/4 t pepper
Instructions
- Wash Yukon potatoes and cover them with water in a Dutch oven. Boil for 30 minutes.
- Remove potatoes from water and place on a parchment lined cookie sheet with sides.
- Using the bottom of a glass jar or glass, press down on each potato to "smash" the potato.
- Drizzle each potato with melted butter and olive oil. Sprinkle with salt and pepper and to a preheated 400° oven to roast.
- Roast potatoes for 30 minutes or so until they are crispy and as brown as you like them.
- Top with the Loaded Potato Dip and crumbled bacon on top of each! Enjoy!
Loaded Potato Dip
- In a small bowl, mix together sour cream, garlic, garlic salt, pepper, cheese, and green onions.
- Feel free to top each potato with a spoonful of the loaded potato dip and then top with bacon.OR you can leave the dip and bacon in small serving bowls and let guests serve themselves.
- This dip can be made ahead and chilled to save time if you'd like. We like it made just before serving.
Notes
Loaded Smashed Potatoes are great for an appetizer, too.
If you are gathering with friends for just an appetizer evening, ballgame, or get together…this recipe will be a new favorite. Add them to a great serving platter with that fabulous loaded baked potato dip and bacon on the side and let everyone dig in!
