A Summer Easy Crockpot Pork Chop Favorite

When summer takes me into the garden and away from the kitchen, this easy crockpot pork chop recipe is one that is my husband’s favorite. It’s an easy way to use the crockpot with pork chops and step away from the stove to have ready at the end of the day.

I love that on a busy summer day when I simply don’t have to think.

Crockpot Pork Chop Favorite

This recipe begins with ingredients that I have on hand.

When the pandemic began, I found myself buying things in bulk. A bag of Jasmine rice tucked into a 5 gallon lidded bucket, cream of chicken soup in cases, boxes of Italian dressing mixes were all added to my pantry. When I find great prices on meat, pork loin and chops are added to my freezer.

Thinking ahead is part of that home economics teacher background that is just simply a basic skills life lesson for me for food preparation.

You know that canning is my passion and adding to the freezer during production months–a true favorite.

So, back to that crockpot pork chop favorite.

Many people tend to only think of crock pot use during the winter months. For me, the crockpot heats the kitchen up less during those summer months than the stove, so I often use mine then…especially when recipes provide a great meal at the end of a busy day.

For some of you it may be a solution to game day meal times or pool days when exhaustion takes over at meal preparation time.

So, let’s begin with this easy crockpot pork chop recipe…

  • Add pork chops or loins to the bottom of your crockpot.
  • Top with a mixture of softened cream cheese and cream of chicken soup.
  • Sprinkle with a packet of Italian Dressing mix.
  • Heat on low for 4-5 hours.
  • Serve over a bed of rice with your favorite side.
  • Enjoy!

Favorite Easy Crockpot Pork Chops

Equipment

  • 1 crock pot

Ingredients
  

  • 4-6 pork loins or chops as many as will fit will still work!
  • 1 can cream of mushroom soup low fat for healthier version
  • 1 8 oz. cream cheese, softened low fat for healthier version
  • 1 pkg. dry Italian dressing mix

Instructions
 

  • Add pork loin or chops to the bottom of your crock pot.

  • Soften cream cheese and mix together with cream of chicken soup.

  • Spread layer of the mixture over the pork.
  • Sprinkle packet of Italian dressing mix over the top of the mixture.

  • Cover and heat on low for 4-5 hours. Edges will be brown and bubbly and pork tender when ready.

  • Serve over prepared rice for comfort food and with your favorite vegetables or salad for lighter fare. Enjoy!

TIP: You can also substitute the chicken for the pork chops for another delicious and easy recipe.
NOTE: Just for me…I prefer making my rice separately rather than adding to the crockpot to cook with the pork chops. It’s lighter and fluffier and requires little prep time to make quickly before serving.
