On the Menu–Chicken Enchilada Soup
Cooler weather and rain just caused my mind to head toward soup on the menu for tonight. Are you a soup lover? I just returned from Haven, a blogging conference, a few weeks ago where I met a new friend from Mad Dash Mixes. I knew from the moment that I met her that it was the start of a great relationship. Our conversations have been frequent and I can’t wait to join her in a couple of weeks for a fun outing. Among her wares, she handed me a few soup mixes. THAT’S where the dinner menu took me today–Cheesy Chicken Enchilada Soup.

I have said that I am truly not a mix girl, but the ingredients on their packaging was exactly what I needed to know for this WW girl. The contents and nutritional information were all there–easy for me to calculate. And, really? The spice blends in my cabinet are really close to the same “mix” worthy status.
But, I almost giggled when I thought about the mix. As I looked at possible additions my thoughts went immediately to “Stone Soup”. Do you remember that story? The man began with a stone and continued to add ingredients from people until he made the most heavenly soup.
Can I tell you how FAR from that story this Chicken Enchilada Soup actually was?
What I discovered with Mad Dash Mixes was I was in a world of the most incredible flavors in a spice packet! Seriously! It was beyond the stone that needed other things to bail it out!
Those of you who followed along on my Kitchen Organizer story know that I am a spice blend girl all day long. When I looked at the ingredients list, I realized it was a great spice blend that I was comfortable having in my pantry.
Off I went to create a grocery list:
- tomato sauce
- milk
- avocados
- rotisserie chicken
- black beans
- corn
- tortilla chips
- Mexican blend shredded cheese
Now, you know me…that marinara sauce would be a perfect blend for this soup. But, after some thought, I added a pint of tomatoes and tomato juice that were in my canning pantry. And that corn from the freezer that I shared with you a few weeks ago would be an amazing addition.
With this cheesy chicken enchilada soup recipe, you can choose rotisserie or canned chicken. There is canned chicken in my pantry, but I truly wanted all of the flavor that a great rotisserie chicken would add to this soup.
The fastest and easiest and cheesiest chicken enchilada soup ever!
Can I tell you what I love about this soup recipe? There was really no preparation to this one! Other than removing chicken from the bone, opening cans and measuring milk—seriously! Nothing any easier when your busy life just needs a delicious and quick option.
If I am needing a quick meal for my family that has great ingredients and is so easy to prepare–I am reaching for this one!
Cheesy Enchilada Soup
Equipment
- measuring cups
- dutch oven
Ingredients
- 1 rotisserie chicken, cut into bitesize pieces TIP: Use kitchen shears to cut it.
- 1 packet Mad Dash Mix- Cheesy Chicken Enchilada Soup CODE: FEETUNDERMYTABLE at checkout for a discount at www.MadDashMixes.com
- 1 15 oz. can tomato sauce I used a pint of tomatoes and tomato juice because they were in my pantry.
- 1 C cold water
- 4 C milk
- 2 C corn I used frozen corn from my freezer for better flavor.
- 1 15 oz. can black beans, drained
Optional Toppings
- Tostito's Hint of Lime Tortilla Chips
- lime slices love a touch of lime added when serving
- avocado slices, if desired
- Mexican Blend shredded cheese
Instructions
- Add to a Dutch oven: tomato sauce, water, milk, black beans, corn, mix and rotisserie chicken and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Remove from heat and add in cheese.
- Pour into serving bowls and top with a squeeze from slices of lime, avocado and tortilla chips.
- Serve and enjoy!

It was heavenly! And made a huge pot. Directions says it serves 6, but, with a whole chicken and everything added, it will serve a lot! We couldn’t believe how fast, easy and delicious it was. Hope you will give it a try, sweet friend!
