A Marvelous and Easy Beef Stew

Do you remember that beef “pot” roast I shared with you? well…it’s the base for this recipe. The most marvelous and easy beef stew ever. This is my favorite “go to” to create a perfect beef stew or hearty beef vegetable soup.

What I love about this beef stew recipe is that it truly makes use of your leftovers or frozen or canned vegetables you have on hand.

Perfect solution when the weather is cold and comfort food is needed.

So, today’s beef stew fits into the favorite soup category.

Are you ready for EASY beef stew?

Well, it doesn’t get any better than this!

Begin the beef stew with your roast leftovers.

That’s where this recipe begins…with great layers of flavors found in that low and slow cooked pot roast beef that I shared with you. One tip here is that I skim the fat off of the leftovers to make a healthier version of beef stew.

It’s a perfect recipe to begin with leftovers to make this stew. The first step is just to remove those leftovers and cut the meat, potatoes and carrots into bite sized pieces. Don’t worry if it looks like there aren’t enough…I only had about 2-3 cups or so to begin with for this recipe and it worked out beautifully.

Next, decide which vegetables you have on hand in the freezer or pantry that sound great to add. I added about 2 cups of diced potatoes, a cup of my frozen corn, a quart of my home canned tomato juice, and a can of green peas, drained.

Seasonings are up to you…whether basil leaves or dried herbs…customize to your flavor. Don’t forget to add salt and pepper to season the added potatoes, carrots, etc. that haven’t been seasoned yet…

For the easy part? Add all of the ingredients into a dutch oven and heat slowly until the stew is the right consistency for you.

Beef Stew or Beef Vegetable Soup?

Just a note here…if you want more of a soup consistency, you can add more liquid–tomato juice- so that you get less of a thick stew consistency.

Also, if you’d love a “soup” consistency, cook for less time. We love the thicker “stew” recipe, so I just watch until it arrives at that thicker goodness.

The BEST Beef Stew

An easy and hearty stew made from leftover "pot" roast!

Equipment

  • 1 dutch oven
  • 1 paring/chef knife
  • 1 cutting board
  • 1 can opener

Ingredients
  

  • Leftover roast beef, potatoes and carrots cut into bite sized pieces
  • additional potatoes and carrots, as desired cut into bite sized pieces
  • 1 quart tomato juice
  • 1 C frozen corn, whole kernel
  • 1 can green peas- drained or frozen, if desired
  • 1 can diced tomatoes, if desired.
  • salt and pepper, to taste
  • additional dried herbs, to taste, basil, thyme, etc.

Instructions
 

  • Take the leftover pot roast and skim the fat off of the top of the container to make it healthier.
  • Cut the meat, potatoes, and carrots into bite sized pieces. Add more potatoes and carrots, cut into bite sized pieces, if you feel you need more to the stew.
  • Add the beef, potatoes and carrots into the large Dutch oven.
  • Add other vegetables as desired. I often add green peas and frozen corn to mine.
  • Add in 1 quart of tomato juice. You may also add diced tomatoes, if desired.
  • Heat until the stew is hot and desired thickness.
  • Serve with a warm, cornbread or crusty bread. Enjoy!

The roast beef recipe that I have shared on my blog is the perfect base for this recipe. Use the search tool to locate it on my blog.
After we have had a meal or two from the “pot” roast beef, I simply add the leftovers to a container for making this stew to enjoy in the days that follow. 
TIP: I skim the layer of fat from the top of the chilled leftovers to make this a “healthier” version of this comfort food. It truly doesn’t affect the flavor or consistency.
This is a great way to stretch your food budget and make wise use of one great recipe as a foundation for another great meal.
I often use leftover veggies that I have in small amounts to add to this, as well, such as lima beans, green peas, carrots and corn. We love adding the tomato juice/tomatoes that I can each summer into this dish, too.
