Do You Need An Easy Easter Brunch Menu?

Do you need an Easter brunch menu that is both EASY and delicious? This one can be adapted for vegan (if eggs are included), vegetarian or gluten free–what could be better to meet all of your guests needs? Plus, it’s impressive and perfect for an intimate gathering or larger group.

I began this Spring or Easter brunch menu with a family favorite. My sister and husband had plans to be in town this weekend and not Easter, so I had to create an intimate gathering with their feet under my table with a perfect spring Easter brunch menu in mind.

How did I begin that Spring or Easter Brunch Menu?

With the main course in mind, I pulled out a family favorite and, interestingly, they had never had it.

Now this is where I can begin to give you tips.

The main course for this brunch menu would begin with an omelet roll.

I realize many of you may have never heard of or eaten one, but they are amazing.

If there are those with feet under your table who need gluten free? I’ve got you covered in the recipe and other offerings. Although none of us needed gluten free for this Easter brunch menu…I created it to be one.

If you have members of your family you will be preparing that brunch menu for who are vegan or vegetarian? I’ve got you—that is if eggs are allowed in their diet!

Swap out the omelet roll ingredients from meat included and make one where sauteed veggies of your choice are added to the toppings and you will knock this one out of the park.

This omelet roll is only limited by your imagination!

Here’s that main entree recipe.

Omelet Roll

A perfect and impressive omelet recipe where you choose the ingredients to make it your own!

Equipment

  • 1 11 x 16 baking pan with sides **I use a stoneware baking pan for this one.
  • wire whisk
  • cutting board
  • chef's knife
  • Mixing bowl
  • parchment paper
  • liquid measuring cup
  • measuring spoons
  • oven

Ingredients
  

  • 4 oz cream cheese, softened
  • 3/4 C milk
  • 12 large eggs
  • 1/4 t salt
  • 2 T all purpose flour **Bob's Red Mill – One to One, for gluten free
  • 2 T dijon mustard
  • 1/4 C green onions, finely minced
  • 1 1/2 C ham, finely chopped **for vegetarian, substitute with your favorite chopped veggies, sauteed in a small amount of butter- red pepper, mushrooms, onions, etc.
  • 1 1/2 C Gruyere or Swiss cheese, grated **feel free to choose whatever cheese is your favorite.

Instructions
 

  • Preheat oven to 375 degrees.
  • Measure and prep all of your ingredients first.
  • Line your baking sheet with parchment paper–make sure it is one huge sheet that you can trim off to hang out over the edges. Overlapping is not recommended! Press into the bottom and up the sides to make sure that egg mixture will not run under the parchment paper or over the sides.
  • Soften cream cheese and add to a mixing bowl. Gradually whisk in milk until creamy to prevent separating.
  • Add flour and salt and mix together in cream cheese mixture.
  • Whisk eggs and add to cream cheese mixture and whisk together until as smooth as you can make it. Don't worry if it looks like bits of cream cheese just floating in the milk…it will still turn out perfectly!
  • Pour egg mixture into the pan and push the paper down in the corners making sure that the egg mixture fills the entire pan.
  • Place the pan on the top shelf of your preheated 375 degree oven.
  • Bake until the omelet is puffy and golden—about 30 minutes or a few minutes longer depending on your oven.
  • If choosing to make this a vegetarian recipe, mince 1 1/2 C veggies of your choice and saute' in a tiny bit of butter and set aside.
  • If choosing the ham and cheese omelet version, chop ham and green onions and set aside.
  • Remove omelet from the oven and immediately spread dijon mustard across the entire surface–don't skip this step–it really makes this recipe!
  • Sprinkle the surface of the omelet with half of your grated cheese to help begin melting it.
  • Next, add your ham or veggies to the entire surface of the omelet. Add green onions if you are making the ham and cheese and then top with the remaining cheese.
  • You may roll jelly roll fashion from either direction…short side to the end which makes it thicker…or from the long end across. I have chosen in the photos to roll from the long side. You choose!
    Remove the parchment paper as you roll.
  • Let the omelet roll rest about five minutes before serving to allow the cheese to melt.
  • Lift the parchment paper and move to your serving tray and carefully roll onto the tray.
  • You may garnish with additional green onions, herbs or cheese.
    I chose to set mine diagonally in the center of a large serving platter and place a bed of arugula and spinach beneath fruit on either side for serving.
    Feel free to be creative here!
  • Serve immediately while hot!

Notes

This recipe is both impressive and delicious. We love the ham and cheese version. 
TIP: You truly can make it easily gluten free by swapping out the flour for gluten free flour.
TIP: This is a great way to be imaginative and creative with whatever toppings that you want inside to make it vegan (if they eat eggs), vegetarian, or meat filled.
Feel free to be imaginative in your toppings from browned, drained sausage to even hash browns–YOU CHOOSE! Isn’t that the best?

Make your Easter Brunch menu easy!

Here’s some Easter Brunch menu ideas:

  • Simply add a bit of green with fresh spinach, leaf lettuce or arugula to either side of your omelet roll serving tray and add your favorite fresh fruit. Our menu included pineapple spears and red grapes to surround the entree. Perfect complement to that omelet roll.
  • Even though I had ham inside our omelet roll, I knew guests would love warmed honey glazed ham and Wright’s bacon added to the menu. TIP: To make those easier, I simply wrapped that ham into foil and added it to the oven for warming and then used my stoneware microwave bacon dish to prepare the bacon. Much easier preparation for both.
  • A simple boxed Gluten Free Krusteaz Cinnamon Swirl mix made the best muffins added to a covered glass cake pedestal. TIP: To make them even more glorious, add them to large sized muffin tins to make larger than normal muffins. Who doesn’t like larger muffins? We are fans of our favorite mini French muffins, but this was an easy option to round out the menu.
  • Beverages were simply coffee and a favorite orange juice.
  • Print out your Menu and have it setting on your buffet table to help guests better understand what you are serving.

Setting up the Easter Table

If you followed my Easter tablescape post, you will know that my table was already set with plates, glasses, silverware, napkins, glasses and coffee cups.

The lazy Susan on my dining room table that you saw when my husband refinished that table, is perfect to add condiments on or items needed for the beverages, such as, carafes so that more coffee or orange juice is at easy access to every one for additional refills. It makes serving less formal and easier for both the host and the guests.

A smaller bunny joined the center of the table to hold sweetener for the coffee–while he stood proudly by his older bunny friend centerpiece. Crystal candleholders were lit just making the table extra special.

Setting up the Easter Brunch Buffet

Usually the serving area is covered with a tablecloth or runner; but in all of our excitement, we just set everything on the wooden countertop. No worries! It still looks beautiful if you don’t have the perfect linens to use.

Here are my suggestions with setting up the buffet for serving:

  • Arrange your buffet items in serving platters that give an order to what you are serving. Mine began with the proteins, then the omelet roll surrounded by the fruit, and then the muffins. Gives them a clue to where the line begins, too.
  • Select serving platters that coordinate–it was easy to tuck fresh greens under the fruit just to make things “pretty”. You choose how to do that.
  • Make serving each item easy…for example, cut the grapes into small sections to make serving size amounts easier to see…and then arrange them all together…cut/serve pineapple into wedges…separate ham slices out for portion sizes, as well as, precut the omelet roll to make serving sizes easier to recognize and easy to serve.
  • Don’t forget to lay out forks or serving spatulas with each buffet item so that people don’t lift things with their hands.
  • You can stack plates on the buffet line, but since plates were at the table, they simply located their seat and had to only pick up the plates. No juggling beverages, napkins and silverware or having to make more trips to get everything to their place setting.

Remember! You are helping your guests navigate portion sizes and serving themselves through the buffet.

Taking the guesswork out helps your guests to feel comfortable…that’s what I am all about!
