The BEST Summer Tortellini Salad

Fresh vegetables and herbs are producing and I LOVE using them in a different salad. I have the BEST summer tortellini salad recipe that is perfect to use up fresh produce!

Goodness, I’m behind on sharing salads. The last salad I shared was the strawberry salad so I need to share more with you all!

Have you ever tried Trader Joe’s Pesto Tortellini? It’s a favorite of mine. If you followed my winter tortellini soup, that’s the basis of that recipe. There’s something about that pesto that elevates the tortellini salad for me. If you are like me and don’t live near a Trader Joe’s, no worries! Pick up your favorite dried or fresh tortellini and simply cook as directed.

I always cool my cooked tortellini and chilling works, too, to begin. My favorite onion for this recipe is fresh green onions; but, shallots are used if I don’t have green onions on hand.

This recipe makes good use of cherry tomatoes and fresh corn, along with fresh basil and a great dressing.

If you have fresh corn, just cut off the cobb and blanche and cool before beginning. There’s always frozen corn in my freezer put away each year, and so that’s an easy ingredient for me to have on hand if fresh isn’t in my fridge.

In the summer, these are ingredients that I have on hand, which is handy when I am craving this summer salad recipe!

Gather ingredients.

  • Cook tortellini as directed on package; drain, and set aside to cool.
  • Wash tomatoes and green onions.
  • Slice cherry tomatoes in half.
  • Slice green onions thinly.
  • Wash and finely chop fresh basil.
  • Cook and cool corn off of the cob.
  • Make dressing.
  • Mix together all ingredients and serve.
Prepping the ingredients takes the most time. While the tortellini is cooking, I prepare the other ingredients for the salad.

Ingredients
  

  • 1 C pesto tortellini measure before cooking
  • 1 C cherry tomatoes, washed/cut in half
  • 2 T sliced green onions or shallots
  • 1 C blanched corn, cut off of the cob or frozen corn kernels
  • 3 T fresh basil, chopped
  • 2 T olive oil
  • 1 T red wine vinegar
  • 1 T fresh lemon juice
  • 1/4 t Salt and freshly ground pepper
  • 1 T shredded Parmesan cheese, or more to taste

Instructions
 

  • Cook tortellini as directed. Rinse with cold water, drain and set aside to cool.
  • Wash cherry tomatoes and cut in half. Set aside.
  • Slice green onion or shallots and set aside.
  • Blanche corn on the cob and then cut off of the cob. TIP: I use frozen corn that I have already blanched and put in the freezer and microwave it for a few seconds before I add it in.
  • Mix together olive oil, red wine vinegar, lemon juice and salt and pepper and whisk to emulsify to make dressing.
  • Place the tortellini, tomatoes, onion, and corn together with the dressing. Stir in the basil and sprinkle with desired amount of shredded Parmesan.
  • Serve immediately. You can make ahead and then add the dressing right before serving.

Notes

This is a great summer salad! Perfect for a picnic or gathering of friends. 
TIP: I always think fresh corn tastes much better; but, you may substitute frozen corn kernels if fresh isn’t available.
TIP: Feel free to substitute cheese tortellini or other types of tortellini for the pesto tortellini. Pesto added is wonderful, too.
