A Great Summer Cantaloupe Salad

Are you a fan of cantaloupe? I have been an off and on lover over the years. But, it seems like this summer that I can’t get enough. They are plentiful here so it was time to add in all of the produce from my Hayco Farms delivery today and make a fresh summer salad.

This was so perfectly summer! So quick, easy and delicious that it was too good not to share with you. This past week has been a bounty of summer salads. From caprese to that great summer tortellini salad and a wonderful watermelon salad that I have to share with you soon, this one is added to the list.

My garden is abundant right now with herbs. They are showing out in glorious fashion. I have added basil to lots of recipes and will be making tomato juice and tomato sauce this week adding into those canned beauties. Growing and using all of those in my kitchen make my heart happy. Fresh bounty of produce! Cantaloupe has so much potential.

So, here’s today’s creation from the bounty of the produce.

Fresh summer produce of cucumbers, red onion, cherry tomatoes, basic added to the cantaloupe with a honey vinaigrette make for a burst of freshness for this summer cantaloupe salad!

Summer Cantaloupe Salad

A great summer salad that uses cantaloupe and summer produce and herbs!

Equipment

  • cutting board
  • knife

Ingredients
  

  • Cantaloupe, bite sized pieces
  • cherry tomatoes
  • red onion, sliced and separated
  • fresh basil or fresh mint, if preferred
  • thin cucumber slices, halved
  • fresh corn, blanched and cut off cob optional

Honey Vinaigrette- per serving

  • 1 T olive oil
  • 1 T red wine vinegar
  • 1 T honey
  • 1 T fresh lemon juice
  • salt and pepper, if desired

Instructions
 

  • Mix together the amount of cantaloupe, cherry tomatoes, cucumbers and red onion desired for the number of servings you need.
  • Add fresh basil or fresh mint to salad.
  • Whisk together honey vinaigrette ingredients and pour over salad right before serving.

Notes

The beauty of this salad is that it is easy to mix together desired amounts of ingredients and then add the amount of honey dressing that you would like right before serving.
I have prepared it without fresh, blanched and cut off the cob corn. It just adds more of a great summer taste with it added. Your choice!
I am more a fan of fresh basil with this salad; but, it is also great with fresh mint.
