Quick & Easy French Onion Soup

Is French Onion soup a favorite for your family? Usually it’s only been eaten out since my husband isn’t a fan.

This summer I actually made caramelized onions in the crockpot, canned, and added them to the pantry for making French Onion soup, adding to burgers or other recipes.

You can certainly make your own caramelized onions before creating the soup OR purchase caramelized onions already made and packaged. Making your own may be more cost effective. Here’s the recipe for the onions that were SOOOOO easy.

Crockpot Caramelized Onions

The easiest way to create the most flavorful caramelized onions for soup, burgers and other recipes.

Equipment

  • crockpot
  • 1 knife and cutting board
  • 1 Pressure canner and stove, if you are going to can them optional

Ingredients
  

  • sweet onions, sliced enough to fill your crockpot
  • olive oil, just to drizzle over the top

Instructions
 

  • Peel onions and remove tops and ends. Slice into thin slices and fill up your crockpot.

  • Drizzle onions with a little olive oil.

  • Cook for about 15 hours until onions have cooked down and caramelized. You choose at which depth of caramelization and color you like.

  • At this point, you can add to pint or half pint jars and pressure can for 70 minutes at 10 lbs. pressure OR add to freezer containers to use later OR use within a few days of making.
    Always follow your pressure canning instructions for your canner when pressure canning.
    TIP: Just note that if you are canning, more cooking will darken the color of the onions.

Notes

An easy way to make the perfect ingredient to add to add to burgers, French onion soup or other favorite recipes that need the depth of flavor from caramelized onions.
The only drawback is smelling the wonderful aroma all night long if you are cooking overnight!

Good intentions met today when I needed a different option for lunch.

I don’t know about your weather, but our temperatures have dropped with frost warnings in the forecast this week. If you are like us? That means it’s soup season full throttle.

There were servings of beef vegetable soup added to the freezer that my husband wanted.

But as for me? French Onion soup was calling my name.

Off to the pantry for a jar of the caramelized onions. I had beef bone broth made and in the freezer already, but purchasing beef and chicken broth OR creating your own with Better than Bouillon works, too.

So, next to choose the soup topping…

Now, French Onion soup needs toasted bread AND cheese on top.

Since I had no baguette in the house? The perfect sized pretzel bun bottom toasted to add to the top with Gruyere cheese was genius.

The bun bottom fit the the soup container perfectly. And what was better? It was the right ratio of bread to soup. YES to great accidents!

Speaking of containers to use to broil soup, make sure it is broiler safe. The one I use is safe up to 500 degrees, so I broil no higher than that temperature.

EASIEST French Onion soup!

With caramelized onions already made or purchased, broth made from Better than Bouillon or packaged, a great bread to toast and cheese ready to grate over the top, this recipe is quick and easy.

Your bowl size will determine the quantity in each serving, so adjust your amounts of each ingredient to serve the number of guests who have their feet under your table.

French Onion Soup

The easiest version of French Onion Soup ever!

Equipment

  • 1 Mixing bowl
  • 1 liquid and dry measuring cups
  • 1 saucepan
  • 1 broiler proof soup bowl
  • 1 oven

Ingredients
  

  • 1 C caramelized onions
  • 1/2 C beef broth
  • 1/2 C chicken broth or skip chicken broth and use 1 C beef broth
  • 1 piece French bread or Bun bottom, toasted
  • 1 T olive oil or butter
  • 1/4 C Gruyere cheese, grated
  • fresh herbs, such as thyme, bay leaf, etc.
  • salt and pepper to taste

Instructions
 

  • Add caramelized onions and broth to a small saucepan and heat together.
    Feel free to add salt and pepper or herbs, if desired, to suit your taste.
  • Drizzle bun half OR French bread with a bit of olive oil or butter and toast.
  • Pour heated onion mixture into broiler safe serving dish.

  • Top with toasted bread.

  • Sprinkle entire surface with grated cheese.

  • Place on a baking sheet with sides to catch any overflow and under a 500° broiler until toasted and brown.

  • Serve immediately!

Notes

With caramelized onions already made or purchased, this soup becomes a fast, easy and delicious way to create French Onion Soup. 
Feel free to use Better Than Bouillon  to make beef and/or chicken broth if you don’t have broth on hand.
Always remember to use a broiler safe dish to melt cheese on top of toast and soup before serving.

What I loved about this version? It was simple and easy.

Caramelized onions and broth in my pantry made it a quick option.

This wasn’t all of the layers of production that French Onion soup usually entails. But, it was a wonderfully warm, delicious and great lunch offering with colder temperatures here.

A quick and easy soup that provided comfort and change in the menu that ticked all the boxes.
