French Onion Soup

Equipment

  • 1 Mixing bowl
  • 1 liquid and dry measuring cups
  • 1 saucepan
  • 1 broiler proof soup bowl
  • 1 oven

Ingredients
  

  • 1 C caramelized onions
  • 1/2 C beef broth
  • 1/2 C chicken broth or skip chicken broth and use 1 C beef broth
  • 1 piece French bread or Bun bottom, toasted
  • 1 T olive oil or butter
  • 1/4 C Gruyere cheese, grated
  • fresh herbs, such as thyme, bay leaf, etc.
  • salt and pepper to taste

Instructions
 

  • Add caramelized onions and broth to a small saucepan and heat together.
    Feel free to add salt and pepper or herbs, if desired, to suit your taste.
  • Drizzle bun half OR French bread with a bit of olive oil or butter and toast.
  • Pour heated onion mixture into broiler safe serving dish.

  • Top with toasted bread.

  • Sprinkle entire surface with grated cheese.

  • Place on a baking sheet with sides to catch any overflow and under a 500° broiler until toasted and brown.

  • Serve immediately!

Notes

With caramelized onions already made or purchased, this soup becomes a fast, easy and delicious way to create French Onion Soup. 
Feel free to use Better Than Bouillon  to make beef and/or chicken broth if you don't have broth on hand.
Always remember to use a broiler safe dish to melt cheese on top of toast and soup before serving.
