It’s a Chicken Soup Day!
The weather outside will soon be frightful…so it’s a chicken soup day! A chicken chile verde soup recipe day to be exact…perfect for cold weather, right?
No surprise that we love soup…so, when Mad Dash Mixes sent me this one to try?…I was ALL in! Even though this is a sponsored post, which means that they provided the product for me to review…ALL opinions are certainly my own.
What I love about their mixes are that they are a perfect foundation “spice mix” to just add other ingredients to my heart’s content. If you are a play by only what the mix says to do…feel free!
But, for me and my house…we will be creative!
So…on with my version of the chicken chile verde soup!
Because I love to layer my soups, I began by adding 1/2 cup of minced onion to a little bit of olive oil in my Dutch oven. Saute’ the onion for just a few minutes to enhance and bring out the flavor.
Next, peel one medium potato if you follow the directions. If you are creative like me then add two cups of peeled potatoes cut into bite sized pieces. (I used Yukon ones for my recipe today).
Now the recipe called for 5 cups of water…well, this IS chicken soup, right? So, I added a container of chicken broth—4 cups and then added 1 cup of water to that and added that to my Dutch oven.
The next step in the recipe is to add 2 cups of cooked, chopped chicken. I always prefer to use my own cooked chicken or a rotisserie chicken. The only thing available to me today was canned chicken, so I drained and added two cans of the chicken along with the mix to finish the soup.
Bring to a boil and then turn your heat to low and simmer for 20 minutes…as it cooks it will thicken, so stir to prevent sticking to the bottom.
Serve that fabulous soup with a bit of sour cream, taco or monterrey jack cheese, cheese quesadillas, and perhaps some mini sweet peppers on the side.
Chicken Chile Verde
Equipment
- 1 dutch oven
- 1 cutting board
- knives
- measuring cups
Ingredients
- 1 package Chicken Chile Verde Mad Dash Mix
- 1/2 C onion, finely chopped
- 1 t olive oil
- 4 C chicken broth
- 1 C water
- 2 C potatoes, peeled/diced
- 2 C chicken, cooked/chopped chicken may be canned, rotisserie or simmered
Instructions
- Finely chop onion and add to olive oil in a Dutch oven. Saute' a few minutes until translucent to bring out flavor.
- Peel and cut potatoes into bite sized pieces.
- Cook and chopped chicken or drain canned chicken.
- Add broth, water, potatoes, chicken, and mix to onions, stirring to mix completely.
- Bring to a boil and reduce heat to low. Simmer for 20 minutes.
- Serve with your choice of sour cream, mini sweet peppers, taco or Colby Jack cheese and cheese quesadillas.
