Do You Need a Great Zucchini Gratin Recipe?

Do you need a great Zucchini Gratin recipe? I have a favorite one that I am having for dinner tonight. The zucchini has already begun coming in and its a welcome sight. Once they begin though, I have to have recipes that I love in order to keep everyone happy and consume all that is coming in.

Whether a zucchini bread or grilled zucchini or with other veggies, I am always a fan. The zucchini zoodles are a favorite, too. But, the first time I had this zucchini gratin recipe, it became a winner in that rotation list.

The beauty of this recipe is that you can make it as light or as rich as you’d like and still have great flavor. It is saved in the WW points app among the created recipes.

It’s a keeper!

This recipe is so easy! I know that many cooks will cook the zucchini and onion together before baking; but, this recipe doesn’t do that.

Didn’t I say easy???

Simply begin by washing the zucchini. No need to peel which adds those nutrients and fiber back into the dish. Slice zucchini into 1/4″ circles. Then cut sweet onion into rounds the same thickness.

Slice the zucchini and onion in 1/4″ rounds. Love that no peeling of that zucchini is required for this recipe!

Alternate the zucchini and onion in a circular fashion filling a greased baking dish.

TIP: Cut the onion in half so that it is closer to the size of the zucchini to tuck in between them.
Begin a circular arrangement of the zucchini and onion in the buttered dish.

Salt and pepper the filled dish.

Next sprinkle with the cheese.

I add the swiss or gruyere cheese and then top with parmesan. Your preference!
Follow the directions for creating the sauce.

Then pour the sauce mixture evenly over the top.

Prepare the sauce and pour over the top.

Just add that dish to a preheated 375 degree oven for 45 minutes and you have the BEST zucchini gratin dish. A favorite side dish for us.

So delicious!

Keto friendly. Can be made gluten free. Plus it’s a great way to get rid of that over abundance of zucchini this time of year.

Ingredients
  

  • 4 C zucchini, washed and sliced into thin rounds
  • 1 yellow or white onion, sliced thinly
  • salt and pepper to taste
  • 2 T butter
  • 1 T flour for gluten free: substitute 1/4 t. xanthan gum
  • 2 cloves garlic, minced
  • 1/2 C whipping cream or fat free half and half
  • 8 oz. grated swiss or gruyere cheese can be fat free versions, if needed
  • 1/2 C grated parmesan cheese

Instructions
 

  • Preheat oven to 375 degrees.
  • Butter inside of a 2 quart casserole dish.
  • Wash and slice zucchini into thin rounds- about 1/4" thick.
  • Thinly slice onions into rounds.
  • Alternate zucchini and onion in a circular pattern filling in the dish completely.
  • Salt and pepper to taste.
  • Melt butter in a small pan. Add minced garlic and flour and stir. Add cream and stir until it begins to thicken.
  • Pour over the top of the zucchini and onion.
  • Top with swiss or gruyere cheese and parmesan cheese.
  • Place in preheated oven for 45 minutes or until cheese is browned.

Notes

This is a delightful side dish when zucchini is plentiful. It can be made gluten free with substituting the xanthan gum for the flour. It’s also KETO friendly for those looking for KETO sides.
NOTE: I have added the sauce BEFORE the cheese in the recipe and then in the photos have added it AFTER the cheese. I have done it both ways and both provide great results.
TIP: Feel free to add as much cheese as that dish needs.
 It’s truly a delicious side dish!
