A Great Summer Cantaloupe Salad
Are you a fan of cantaloupe? I have been an off and on lover over the years. But, it seems like this summer that I can’t get enough. They are plentiful here so it was time to add in all of the produce from my Hayco Farms delivery today and make a fresh summer salad.
This was so perfectly summer! So quick, easy and delicious that it was too good not to share with you. This past week has been a bounty of summer salads. From caprese to that great summer tortellini salad and a wonderful watermelon salad that I have to share with you soon, this one is added to the list.
My garden is abundant right now with herbs. They are showing out in glorious fashion. I have added basil to lots of recipes and will be making tomato juice and tomato sauce this week adding into those canned beauties. Growing and using all of those in my kitchen make my heart happy. If you’d love to know about how I harvest my herbs, you can read about them here.
So, here’s today’s creation from the bounty of the produce.

Notes
This truly is a fresh way to have a taste of summer. So light and full of fresh flavors! Hope you’ll give it a try. I’m off now to can tomato juice. Just finished putting fresh corn into the freezer yesterday. I’ll be sharing both on the blog soon…
Stay tuned! Thanks so much for joining me here! It feels like if your feet can’t actually be under my table; that virtually, it may feel like they are.

This looks so good. I just put up corn in the frezzer yesterday too. The raccoons got to most of it sadly. Pinned!

Oh, no! I am NOT a raccoon fan for MANY reasons! I was able to find that corn from a local Amish farmer…it is truly amazing! Still canning over here…ALLLLLL week long! But, in my happy place. Happy weekend!
