New Year’s Keto Friendly Frittata
You know when you take a great recipe and tweak it to make it your own that you better write it down, right? That’s what happened with this Keto Friendly Frittata.
We had a new guest at the Christmas Brunch from Japan this year. My niece’s boyfriend joined us and of all of the American and Southern foods on the table…his favorite was this new frittata creation.
Seriously–there were french muffins, potato casserole, ham, bacon, hot cinnamon fruit, company eggs, fresh fruit, boiled custard, hot cinnamon apple juice, coffee…you know! The works.
And from all that were on the buffet table…his favorite was the Keto Sausage and Veggie Frittata. A last minute creation with what was in my fridge.
The plan now is that it will be served again for New Year’s with family in Florida.
Who knew this Keto Frittata recipe would be a hit?
Right?
My thoughts were to reduce the carbs for my sister and sister in law and add a dish that they could indulge in and a perfect choice.
Inspired by another blogging friend, this one was simple.
Here’s what my fridge and creation offered:
- Begin with bit of cooked and drained ground sausage in the bottom of a 9 x 13 pan.
- Follow with a layer of spinach.
- Next top with a mixture of cooked onion, peppers, mushrooms and roasted tomatoes.
- Then cover with beaten eggs and cheese.
- Bake for 35 minutes or so until set.
How easy is that?
And to make it even easier…just prepare it the day and bake the morning you are going to serve.
Perfect!
When the recipe was asked for again…and then again…and for New Year’s…I thought perhaps all of you might need something a bit healthier and easy to have to bring in the New Year for brunch.

Keto Frittata
Equipment
- 1 oven
- 1 9 x 13 baking dish
- Skillet
- knife and cutting board
Ingredients
- 1 lb ground pork sausage
- spinach, enough to cover sausage layer
- 1 yellow onion, chopped
- 1 yellow pepper, diced
- 1 orange pepper, diced
- 1 C fresh mushrooms, diced
- 1 C cherry tomatoes, sliced or diced, drained
- 12 large eggs, lightly beaten
- salt and pepper to taste
- 1-2 C grated cheese- either cheddar or Colby Jack
Instructions
- Preheat oven to 350°.
- Brown sausage in skillet.
- Add cooked sausage to bottom of buttered 9 x 13 baking dish. NOTE: My sausage left a slight amount of grease in the bottom of pan that I used to cook the veggies in, but, there was no need to drain. Feel free to drain if yours produces an excess of grease to make it healthier.
- Top with a layer of fresh spinach.
- Chop onion, peppers, and mushrooms and add to skillet that sausage was cooked in. If using fresh tomatoes, slice and add to the veggies. Cook until tender. If using diced canned tomatoes, make sure that they are drained before adding them to the other vegetables to cook.Add salt and pepper, as desired.
- Add cooked layer of vegetables on top of spinach.
- Whisk eggs until beaten well. I added a little more salt and pepper to the eggs. Pour over vegetable layer.
- Top with cheese.
- Bake in preheated oven until center is set–about 35 minutes or so, until center is set.

How much easier does it get?
Make it easy on yourself and prepare it the day before, cover and refrigerate and then just bake before your brunch guests arrive.

Good morning & almost Happy New Year sweet friend! Love your frittata recipe. No wonder it was your guest’s fav! And look how colorful! Like the idea of using what’s in frig. When I don’t have all those fresh onions, peppers, tomatoes, mushrooms & sausage-I use a can of original rotel, drain well and whisk in cup of heavy cream. Once cooked-individual servings of left-overs freeze well. Such a tasty quick breakfast or even snack. I don’t usually keep sausage but do often have bacon-which works great with that salty crunch. Can’t beat a flavorful frittata-thanks for sharing-always encourages us to cook cook cook❤️
