Roasted Beets- A Favorite Side
Are you a beet lover? I know you are either a lover or hater of beets. It’s one of those vegetables. I love them any way they are prepared. Canned, pickled, cold, warm…and then I made roasted beets. OH, MY!
The roasting brings out the sugars in the beets and gives them the BEST flavor. Perfect just as a side. A great addition to salads with a bit of arugula, kale or feta.

This is truly the easiest recipe ever.
If you want to protect your hands from the red color from the beets that may linger…don some gloves.
So here you go:

The Roasted Beets Recipe.
It’s so easy it doesn’t need one. But in case you need to remember exactly how to repeat the results, save, pin or print this one.

Roasted Beets
Equipment
- 1 Baking sheet with sides
- 1 oven
- 1 paring knife and cutting board
Ingredients
- 4 fresh beets
- 2 T olive oil
- salt and pepper
Instructions
- Preheat oven to 400°.
- Line a baking sheet with parchment paper.
- Wash beets and remove greens.
- Cut ends off of beets and peel.
- Cut beets into 1" pieces and add to a mixing bowl.

- Mix in olive oil and salt and pepper.

- Spread beets onto parchment paper, leaving space between them to roast.

- Add to preheated oven and roast for 40-50 minutes. Be careful not to let them dry out too much.

- Serve as a side or great addition to your favorite salad.

Notes
This may be my very favorite way to eat fresh beets. The sugars that roasting brings out in the beets is perfect for a side or added to a salad.
You may have done this before…but for me? This was a first. I’m not sure why…but its a new favorite.
