Roasted Beets
An easy way to roast beets for a great side dish or addition to a salad.

- 4 fresh beets
- 2 T olive oil
- salt and pepper
Preheat oven to 400°.
Line a baking sheet with parchment paper.
Wash beets and remove greens.
Cut ends off of beets and peel.
Cut beets into 1" pieces and add to a mixing bowl.
Mix in olive oil and salt and pepper.
Spread beets onto parchment paper, leaving space between them to roast.
Add to preheated oven and roast for 40-50 minutes. Be careful not to let them dry out too much.
Serve as a side or great addition to your favorite salad.
