Watermelon Cake

A simple stacking of rounds of watermelon with rind removed and decorated with berries, herbs, lettuces, edible flowers and fruits to make your own creation.

Equipment

  • 1 cutting board and large cutting knife
  • 1 serving tray
  • 1 pkg round toothpicks

Ingredients
  

  • 1 large watermelon, seedless
  • 1 bunch leaf lettuce
  • fresh fruit, such as, strawberries, blackberries, blueberries or raspberries; citrus slices; and/or grapes.
  • fresh herbs, such as, mint, rosemary, basil, oregano
  • edible flowers, such as, pansies, roses, or nasturtiums

Instructions
 

  • Wash watermelon under cold water to clean.
  • Place watermelon on a cutting board and cut a slice from bottom and top to make cutting layers evenly easier.
  • Leaving the rind on, use a ruler and mark layers around the watermelon to provide a guide for cutting even layers.
    NOTE: Layers will be different sizes at different parts of the watermelon, giving you stacked layers of different sizes like a wedding cake.
  • Using a large sharp chef's knife, carefully follow markings, keeping your layers level as you cut through the watermelon.
  • Lay the layer flat on the cutting board and carefully cut off the rind and white part, leaving only the red part of the watermelon.
    Keep the layers round as you remove rind and white part of the watermelon.
  • Just a note: It's best to make the watermelon cake at the location it will be served, if possible.
    Also best to create, or garnish as close to serving time as possible to keep cake and garnishes as fresh as possible when presenting and serving.
  • On a large serving platter, begin building your cake...lay the slices with the larger layer on the bottom and smallest one on top.
  • Add leaf lettuce around the base of the cake with toothpicks.
  • Be creative and secure your favorite fruits, herbs, and flowers to decorate your cake. Use toothpicks to attach and hold each item added.
  • Serve by slicing each layer into slices.

Notes

A beautiful and elegant way to serve a summer favorite. Use it as an additional cake at weddings, birthdays or other celebrations.
Since watermelon loses juices, and flowers and foliage can wilt, it's best to create the cake and garnish as close to serving time as possible.
This is a beautiful and perfect addition for a garden party.
