Add dried beans to a Dutch oven, removing any discolored beans or rocks. Cover with 4-6" of water. Cover pot with a lid and soak overnight.
Drain and rinse beans and set aside.
Prep and measure remaining ingredients.
To a Dutch oven, add butter, olive oil, diced onions, and bacon and cook until bacon is browned.
Add minced garlic, salt, pepper and garlic powder and cook until mixture is coated.
Pour in chicken stock, water, bay leaves and ham and/or ham hock. Simmer, covered for about 30 minutes.
Add in the beans and simmer, covered , until the white beans are soft, about 2 hours. NOTE: Make sure that the liquid doesn't dry out and beans become mushy. You choose how much liquid you want in the beans for serving.
Remove from heat and discard bay leaves.Serve and enjoy with cornbread or biscuits!
