Rotini Lasagna

Using rotini instead of lasagna noodles with other classic lasagna ingredients gives an ease in preparing and eating. Quick, easy and delicious, this may become your new favorite version.

Equipment

  • 1 oven
  • 1 saucepan
  • 1 large pot or Dutch Oven
  • 1 colander
  • 1 set Measuring cups/spoons
  • 1 casserole dish

Ingredients
  

  • 1 pkg rotini use rice pasta to make gluten free
  • 1 t salt
  • 1 jar spaghetti sauce - or your own homemade
  • 1 C cottage cheese
  • 2 C mozzarella cheese

Instructions
 

  • Fill a large pot or Dutch oven with water and 1 t salt and bring to a boil.
  • Add rotini to the boiling water and cook as directed on package - usually 10-12 minutes.
  • Drain completely in a colander.

  • While rotini is cooking, make your own sauce or have favorite jar of spaghetti or marinara sauce ready.
  • Preheat oven to 375°.
  • Grease casserole dish.

  • Add drained rotini to casserole dish and cover evenly with sauce.

  • Spread cottage cheese layer over sauce.

  • Cover with mozzarella cheese.

  • Bake uncovered in preheated oven for 25 minutes. Cheese should be lightly browned and casserole heated throughout.
  • Feel free to add a sprinkle of Parmesan cheese and fresh basil when serving.

Notes

An easy unstructured version of lasagna in casserole form. Much easier to eat with rotini and so delicious.
