Orange Blender Loaf Cake
A moist orange loaf cake made in a blender. So quick, easy and delicious!

- 1 large navel orange- washed, quartered and seeded
- 4 large eggs, room temperature
- 3/4 C olive oil
- 1/4 C sour cream
- 1 1/4 C sugar
- 2 t vanilla
- 2 C all purpose flour OR 2 1/4 C gluten free
- 1/2 t salt
- 1 T baking powder
Glaze
- 1 C powdered sugar
- 2 T orange juice
Preheat oven to 350°.
Grease 9 x 5 loaf pan. Set aside.
Measure all ingredients.
Wash, quarter and seed on navel orange and add to blender.
Add eggs, olive oil, sour cream, sugar and vanilla to the blender. Process until smooth. Be careful not to over blend.
In a separate bowl, mix flour, salt and baking powder.
Add dry ingredients to blender, pulsing a few times to just incorporate ingredients into the wet and not overmixing.
Pour the batter into the greased loaf pan and place in the preheated oven.
Bake for 55 minutes or until top is golden and a cake tester comes out clean.
Let the cake rest for at least 10 minutes before removing from the loaf pan. Continue to cool completely on a cooling rack.
While cake is cooling mix glaze ingredients. Pour over cooled cake.NOTE: feel free to add more powdered sugar if glaze needs to be thicker. Feel free to add more orange zest, if desired.
