Martha's Vineyard Black Dog Tavern Inspired Asian Salad

A delicious soba noodle salad tossed in a ginger dressing topped with red cabbage, carrots, broccoli, tomatoes, edamame, bell peppers with green onions and toasted sesame seeds.

Equipment

  • 1 Stove
  • 1 Large pot
  • 1 strainer
  • 1 knife and cutting board
  • 1 large bowl
  • 1 small bowl
  • 1 Whisk
  • 1 set Measuring cups/spoons

Ingredients
  

  • 8 oz soba noodles, cooked
  • 1 C red cabbage, thinly sliced
  • 1/2 C edamame, shelled and cooked
  • 1 C cherry tomatoes, halved
  • 1/2 red bell pepper, diced
  • 1/2 C cucumber, thinly sliced
  • 1 C carrots, grated
  • 1/2 C broccoli florets
  • 2 T cilantro, chopped
  • 1/4 C green onions, finely sliced
  • 2 T sesame seeds, toasted

Dressing

  • 3 T soy sauce or less to your tastes.
  • 2 T sesame oil
  • 1 T rice vinegar
  • 1 T honey
  • 1 t ginger, freshly grated
  • 1 T smooth peanut butter, optional Not included in the original inspired Martha's Vineyard Black Dog Tavern dressing.

Instructions
 

  • Bring a large pot of water to boil and add soba noodles and cook according to package directions- typically 4-5 minutes.
    Rinse under cold water to stop cooking and drain.
    Set aside.
  • Blanch broccoli florets until bright green for 2-3 minutes and immerse in ice water for a couple of minutes.
    Cut into tiny florets that give ease to eating. Set aside for assembly.
  • Shell, and cook edamame for a few minutes in boiling water. Run under cold water to cool, drain and set aside.
  • Toast sesame seeds for a few minutes in a 375℉ oven. Set aside to cool.
  • Prep all other vegetables for the salad.

Dressing

  • In a small bowl, whisk together the dressing ingredients.

Assemble Salad

  • In a large bowl, combine the cooled soba noodles, cabbage, edamame, tomatoes, bell pepper, cucumber, broccoli, carrots, cilantro and green onions.
    TIP: The Martha Vineyard inspired recipe does not include peanut butter in the dressing. Feel free to add that in if it's to your taste.
  • Stir in dressing and top with toasted sesame seeds. Feel free to serve with toasted or fried pita chips.
