Italian Breaded Lemon Cod

A breaded cod fillet pan fried in butter, onion, garlic and lemon. Perfect flavor. Ready in 30 minutes!

Equipment

  • 1 large skillet
  • 1 knife and cutting board
  • 1 set measuring cups

Ingredients
  

  • 5 pieces cod, boneless skinless filets I used individually wrapped frozen cod filets
  • 1 large egg, whisked
  • 1/4 C Italian bread crumbs gluten free, optional
  • 1 large lemon, sliced thinly
  • 2 cloves garlic, minced
  • 4 T butter
  • 1/4 C onion, minced
  • salt and pepper to taste
  • fresh parsley for garnish if you like

Instructions
 

  • Add the egg to a bowl and whisk.
  • Pour bread crumbs into another bowl.
  • Add butter, minced onion, lemon slices, and garlic to a large skillet and saute.
  • Dip each cod filet into egg and then into bread crumbs, coating all sides.
  • Place coated cod into hot skillet and brown on both sides, being careful to turn to keep bread coating on.
  • Season with a sprinkle of salt and pepper to taste.
  • When fish has cooked completely, serve with your favorite side and enjoy!
  • ***Feel free to top with a sprinkle of fresh parsley if you like.
