Butter one side of each slice and lay down buttered side into a skillet on low to medium heat.
Flip the toasted bread and to one slice add the cheese, your choice onto the toasted side of the bread and adding the second slice of bread with toasted side next to cheese.
Butter the outsides of each slice of toast so that you get toasted bread on BOTH insides and outsides of the grilled cheese.
Flip the grilled cheese until both sides are toasted and the cheese is melted.
Remove from skillet and let cool a few moments.
Use a serrated knife to slice the sandwich into one inch square "croutons".
Add warm croutons to soups or salads.
If refrigerating them before serving, add them to a toaster oven or oven to crisp before topping soups or salads.
