Add ground beef to a skillet, and brown, stirring to break up to small pieces.
Add diced bell pepper and green onion and cook a few minutes to soften.
Drain excess grease from beef and add beef mixture to a mixing bowl.
Stir in taco seasoning and water. Then add cheese to mixture. Set aside.
On a round baking stone OR baking sheet lined with parchment paper, place crescent rolls that have been separated into triangles into a circle with wide ends overlapping and points of the triangles toward the outside.
There should be a 5" circle in the center when all of the rolls have been overlapped to form a circle.
Use a scoop to add the meat mixture into the center of the rolls.
Wrap the crescent rolls over the taco meat mixture by bringing the pointed ends of the rolls over the meat and tucking in under the wide ends in the center. NOTE: The filling will not be completely covered.
Add ring to preheated 375° oven and bake for 20-25 minutes or until golden brown.
Let cool a few minutes before transferring to the serving tray.
While the taco ring is baking, create serving dishes out of peppers by cutting off tops, scooping out seeds and making V shaped edges around the tops.
Chop up lettuce to surround the taco ring and serve as a topping when serving.
Move the taco ring carefully to your serving tray. Surround with your toppings.
Fill peppers with your favorite toppings--salsa, sour cream. olives, cheese.
Slice more peppers to serve with the taco ring.
When you have finished adding your toppings, set out to serve!!
