Grease a 9 x 13" baking dish.
Slice croissants in half.
Add one slice of ham and cheese to each croissant.
NOTE: at this point, determine serving size...either whole croissant or cut each sandwich in half if serving with a brunch buffet.
Add sandwiches to greased baking dish.
In a mixing bowl with a pouring spout, whisk together eggs, milk, onion powder, garlic powder, salt, pepper and paprika.
Pour mixture between sandwiches, avoiding the tops of the croissants as you add mixture to the dish.
Brush the tops of all of the croissants with melted butter.
Cover dish and refrigerate for at least an hour or overnight.
When ready to bake, preheat oven to 375° and bake for about 35-45 minutes or until eggs are no longer runny.
Cut and serve while hot. Enjoy!
