Add two overripe, peeled bananas to the mixer and mix until well mashed.
In a separate bowl, mix together flour, sugar, cinnamon and soda and add them to the bananas and begin mixing on low.
To the batter, add egg, vanilla and butter and continue mixing. Then mix in nuts.
Pour batter into greased loaf pan and into a preheated 350° oven for 55 minutes or until cake tester comes out clean.
Let banana nut bread cool in pan a few minutes before turning over onto a cooling rack to cool.
After cooling, this bread may be tightly wrapped or placed into a food saver bag and added to the freezer to enjoy later. Just remember to set out the night before serving.
