Apple Bread

A great fall bread that marries the flavors of apples with seasonal spices to create a delicious bread.

Equipment

  • 1 grater
  • 1 set Measuring cups/spoons
  • 1 Mixing bowl
  • 1 4 x 8" loaf pan
  • 1 oven
  • 1 Skillet
  • 1 knife and cutting board

Ingredients
  

  • 2 large baking apples- peeled, cored, and grated
  • 2 T sugar
  • 1/2 C brown sugar
  • 1/4 t freshly grated nutmeg, or ground nutmeg
  • 1 1/2 t cinnamon
  • 1 1/2 C plain flour
  • 1 t baking soda
  • 1/4 t salt
  • 1/4 C vegetable or canola oil
  • 2 large eggs, beaten
  • 1 t vanilla
  • 3/4 C chopped walnuts or pecans
  • Powdered sugar or whipped cream for topping

Glazed Nuts Topping

  • 1/2 C walnuts or pecans, chopped
  • 1 T brown sugar
  • 1 pinch salt
  • 2 T maple syrup

Instructions
 

  • Measure all ingredients.
  • Preheat oven to 350°.
  • Spray a 4 x 8" loaf pan with cooking spray and line with parchment paper.

  • Peel, core and grate apples with a food processor or a grater.

  • Place apples in a mixing bowl and add the sugar, brown sugar, ginger, nutmeg, cinnamon and stir to coat. Set aside for 10 minutes.

  • In a separate mixing bowl, whisk or sift together the flour, soda, and salt.
  • Add oil, eggs, and vanilla to the apple mixture and stir until well blended.

  • Stir in the flour mixture into the apple mixture a little at a time until the flour mixture disappears, and being careful to not overmix.

  • Fold in the chopped nuts, if desired.
  • Pour batter into the pan and then top with the glazed nut topping, if desired.

  • Add to a center rack in a preheated 350° oven for 60 minutes or until cake tester comes out clean.
    NOTE: If bread is browning too quickly midway through baking, cover with aluminum foil.

  • Let the bread cool on a wire rack for about 10 minutes before lifting the loaf from the pan with the parchment paper, for ease in removing it.

  • Optional, dust with powdered sugar.
  • Serve warm with whipped cream to make it even more decadent.

Glazed Nut Topping

  • If desired, preheat a dry skillet to medium heat and add the topping ingredients into the pan- nuts, brown sugar, and maple syrup.

  • Stir until nuts are toasted and syrup is caramelized.
  • Pour out onto parchment paper and sprinkle with the salt and rough chop.
    Leave to cool until ready to add them to the top of the bread batter before baking.
