Measure all ingredients.
Preheat oven to 350°.
Spray a 4 x 8" loaf pan with cooking spray and line with parchment paper.
Peel, core and grate apples with a food processor or a grater.
Place apples in a mixing bowl and add the sugar, brown sugar, ginger, nutmeg, cinnamon and stir to coat. Set aside for 10 minutes.
In a separate mixing bowl, whisk or sift together the flour, soda, and salt.
Add oil, eggs, and vanilla to the apple mixture and stir until well blended.
Stir in the flour mixture into the apple mixture a little at a time until the flour mixture disappears, and being careful to not overmix.
Fold in the chopped nuts, if desired.
Pour batter into the pan and then top with the glazed nut topping, if desired.
Add to a center rack in a preheated 350° oven for 60 minutes or until cake tester comes out clean.NOTE: If bread is browning too quickly midway through baking, cover with aluminum foil. Let the bread cool on a wire rack for about 10 minutes before lifting the loaf from the pan with the parchment paper, for ease in removing it.
Optional, dust with powdered sugar.
Serve warm with whipped cream to make it even more decadent.
