Molasses Cookies

Each bite of these cookies is heaven! A Christmas favorite!

Equipment

  • cookie sheet
  • mixer
  • 1" scoop

Ingredients
  

  • 1/2 C butter
  • 1/4 C vegetable shortening
  • 1 C sugar
  • 1/4 C molasses
  • 1 egg
  • 2 C all purpose flour
  • 1 t cinnamon
  • 2 t baking soda
  • 1/2 t ginger
  • 1/2 t cloves
  • 1/2 t salt
  • sugar for rolling

Instructions
 

  • Preheat oven to 375 degrees.
  • Cream the butter, sugar and vegetable shortening together until fluffy.
  • Add in the molasses and egg and mix well.
  • Add the flour and spices together until well combined and add to wet ingredients.
  • Roll the dough into 1" balls and then roll them in sugar. I use a 1" scoop to make the balls equal sizes that bake evenly.
  • Place 2" apart on a cookie sheet.
  • Bake for 8-10 minutes until they just start to crackle on the top--that way they will be soft.
  • Cool on the cookie sheet for a minute and then move onto a cooling rack to cool completely before storing in a tin.

Notes

Watch carefully to make sure that you remove when they just begin to crack! That way they remain soft.
