1905 Salad from the Columbia Restaurant

Equipment

  • 1 serving bowl
  • 1 chef's knife and cutting board
  • 1 liquid measuring cup
  • 1 set measuring spoons

Ingredients
  

  • 4 C iceberg lettuce, broken into 1" pieces
  • 1 ripe tomato, cut into eighths
  • 1/2 C baked ham, julienned 2" x 1/8" strips
  • 1/2 C Swiss cheese, julienned 2" x 1/8" strips
  • 1/2 C green olives
  • 2 C 1905 Dressing, below
  • 1/4 C Romano cheese, grated
  • 2 T Worcestershire sauce
  • 1 lemon lemon, juiced

"1905" Dressing

  • 1/2 C extra virgin olive oil
  • 4 cloves garlic, minced
  • 2 t dried oregano
  • 1/8 C white wine vinegar
  • salt and pepper to taste

Instructions
 

  • Combine lettuce, tomato, ham, Swiss cheese and olives in a large salad bowl.
  • Before serving, add dressing, Romano cheese, Worcestershire sauce and juice of 1 lemon.
  • Toss well and serve immediately.

"1905" Dressing

  • Mix olive oil, garlic and oregano in a bowl. Stir in vinegar and season with salt and pepper.
  • NOTE: Although the Columbia Restaurant recipe suggests making the dressing a day or two before and refrigerate, we have found this to be more difficult to serve.

Notes

The Columbia Restaurant adds the dressing, Romano cheese, lemon juice and Worcestershire sauce to the salad at the table which adds to the experience of enjoying this salad.
