Who Needs a New Favorite Christmas Cookie?
Anyone for a new Christmas cookie recipe? A molasses cookie? Although it’s not new to us, it’s too good not to share for it to become a new Christmas cookie to someone!
Of course, this one has a story. Don’t you love a good Christmas story?
Once upon a time, there was a little girl who lived in North Carolina. While she was in elementary school, she had a wonderful neighbor who baked an amazing molasses cookie recipe and shared them with her daughter’s friends. Because this little girl LOVED them so much…her Mom got the recipe from the neighbor. The rest is history.
I love this story. It spoke volumes to me. Isn’t it interesting the impact that you may have on others? Like this recipe? She may not have remembered anything else about that sweet neighbor but that recipe!
But, those molasses cookies were so wonderful, she has continued to make them. Every. Year. At Christmas time.
When that sweet little girl got to college, she met my son…and brought in this amazing recipe her first Christmas with us. In a tin. And now, years later, this wonderful daughter in love, always brings them home for Christmas. And they arrive in a Christmas tin for all of us to devour. They are simply the best. Heavenly. Delightful. Perfect.
Christmas just would not be the same without them. It’s a Christmas cookie tradition now to have them. Loved by ALL of us.
And what makes this story even better?
These sweet grands making them with her. They both love to cook and bake and eat what’s made. This recipe is no exception! Aren’t they the cutest?
Don’t you just love a story with a happy ending?
Here’s the recipe for it to become your favorite Christmas cookie, too. An addition to the sugar cookie recipe that I shared. Just a tip as you make these, that I love using the doughmaker pans with this recipe, too. It’s one of my favorites to bake cookies. No need to ever grease the pans for any recipe with these!
Molasses Cookies
Equipment
- cookie sheet
- mixer
- 1" scoop
Ingredients
- 1/2 C butter
- 1/4 C vegetable shortening
- 1 C sugar
- 1/4 C molasses
- 1 egg
- 2 C all purpose flour
- 1 t cinnamon
- 2 t baking soda
- 1/2 t ginger
- 1/2 t cloves
- 1/2 t salt
- sugar for rolling
Instructions
- Preheat oven to 375 degrees.
- Cream the butter, sugar and vegetable shortening together until fluffy.
- Add in the molasses and egg and mix well.
- Add the flour and spices together until well combined and add to wet ingredients.
- Roll the dough into 1" balls and then roll them in sugar. I use a 1" scoop to make the balls equal sizes that bake evenly.
- Place 2" apart on a cookie sheet.
- Bake for 8-10 minutes until they just start to crackle on the top–that way they will be soft.
- Cool on the cookie sheet for a minute and then move onto a cooling rack to cool completely before storing in a tin.
