The BEST and EASIEST Potato Skins
Are you a potato skin lover? Over the past weekend of Super Bowl snacks, my sister in love shared a recipe for the BEST and EASIEST version of potato skins. I guess I find them daunting and avoid making them at home because of feeling that they are a bit time consuming and labor intensive.
You know.
Bake the potatoes.
Scoop the potatoes and bake or fry again.
But, this easy potato skin recipe?
So. Very. Simple.
And frankly?
They melt in your mouth.
Although the recipe shared with me began with russet potatoes, the small Yukon ones in my pantry were my chosen replacement. Such a great switch.
These potatoes when sliced into rounds and then seasoned and baked proved the most creamy version to hold all of those toppings.

Here’s the recipe so that you can give them a try.
Quick and Easy Potato Skins
Equipment
- 1 Baking Sheet
- 1 chef's knife
- 1 cutting board
- 1 Mixing bowl
- 1 oven
- 1 set measuring spoons
- parchment paper
Ingredients
- 4 Yukon potatoes. sliced into 1/2" rounds
- 2 T olive oil
- 1/2 t garlic powder
- 1/2 t onion salt
- 1/4 t pepper
- 1/4 t kosher salt
Toppings
- Cheddar cheese, grated
- bacon, cooked and chopped
- green onions, sliced
- sour cream
Instructions
- Preheat oven to 400°.
- Measure all ingredients.
- Add parchment to baking dish with sides.
- Wash potatoes and slice into 1/2" rounds.
- Add potatoes into a mixing bowl and add olive oil and seasonings and mix well.
- Add potatoes into a single layer onto the baking sheet.
- Place on the top shelf of a preheated 400° oven.
- Bake for 20 minutes. Remove from oven and flip potatoes over.
- Add baking sheet back into oven and bake for another 20 minutes.Feel free to bake longer for crispier potatoes.
- Remove from oven and add chopped bacon and grated cheese on top of each potato round.
- Place baking sheet back into the oven for 2-3 minutes until cheese is melted.
- Add potatoes to a serving platter and top with sour cream and sprinkle with diced green onions.
- Serve immediately.
Notes
Bite sized perfect potato skins.
Melt in your mouth goodness.
The only issue??? Limiting yourself on how many of these to eat.
Since Yukon potatoes are small they make the best bite sized potato skins for appetizers. Feel free to use more, if needed, to suit your gathering needs. The size of your potatoes will determine how many slices that you get per potato. About 5-6 slices from each potato is a guesstimate. I simply allowed one potato per serving.
I added these with Ro’s Crab Cakes and…oh, my goodness! Perfect side dish!
