Easy Morning Muffins to the Rescue
With fall schedules in place, friends, that means a need for lots of easy and fast –and add in healthy–breakfasts to prepare. I realize that cereal may be a favorite…but what if I gave you a recipe for 5 dozen muffins that store beautifully in the fridge and ready to bake at a moment’s notice? Just add a bit of “in season” fruit, like apples, blueberries, chocolate chips or a bit of granola, cinnamon sugar or nuts sprinkled on top and you have happy kids (big and little) to start their day. The most glorious easy muffins that may be one you add as a healthy option.
Seriously, teach them how to bake them and then scoot out of the way. Learning continues and both parents and kids are happy.
Add creativity to those Muffins:
- Apple
- Blueberry bran
- Chocolate chip
- Banana nut
- Granola
- Date
- Raisin
- Cranberry
- Even add a bit of cinnamon and sugar to tops for baking to take it over the top!
(I have seen it happen…just sayin’!)
Truthfully? Big Kids will love these, too!
Who knew that a bran muffin could be so easy and delicious…plus the health benefits of these muffin ingredients will surprise you.
So…where did this muffin recipe come from?
Well…this is a sweet story.
When my husband would go on snow skiing trips with his dad in Januarys during our early married years, Annie, his sweet grandmother would request that the baby and I stay with her when he was gone.
You didn’t have to twist my arm!
Seriously, this little lady in her 80’s was the most amazing cook and BEST hostess ever.
I learned so much from her.
During one of those stays, she removed a jar from the refrigerator and scooped some of this muffin mix into the muffin tin and baked them.
The ones she served were simple bran muffins with no other ingredients added…but, OH! MY!
LOVE AT FIRST BITE!
That recipe went home with me and during our early married years I made them.
As I was looking through recipe files for another recipe this one jumped out at me…and I realized…
School day and work day mornings need these.
Why had this recipe not been added to our breakfasts? I have no clue why this recipe got lost in the years.
But…a hot muffin with their favorites in them??!!
They will be a favorite.
Can I tell you that with jars of these in your refrigerator…everyone will be happy!
As I began grocery shopping for this one, as with many old family recipes, some products are no longer options. With a bit of research, I was able to switch out equivalent ingredients that gave the same sweet and fabulous results.
So, here you go…
Easy Morning Muffins
Equipment
- Quart Canning jars
- mixer
- Mixing bowl
- liquid measuring cups
- Dry measuring cups
- measuring spoons
- oven
- muffin tins
- scoops keeps muffins the same size
- tea kettle, optional but makes boiling water easier
Ingredients
- 2 C boiling water
- 2 C Kellogg's All Bran Buds Cereal replacement for Nabisco Bran 100%
- 1 C Coconut oil Recipe calls for shortening…feel free to substitute with coconut oil or butter
- 2 1/2 C Sugar
- 4 large Eggs, beaten
- 1 qt. Buttermilk
- 5 C All Purpose Flour
- 1 t Salt
- 5 t Baking Soda
- 4 C Kellogg's All Bran Cereal
Instructions
- Pour boiling water over Kellogg's All Bran Buds cereal. Set aside.
- ***If you are baking some immediately, preheat your oven to 400°.
- In a separate mixing bowl, cream together coconut oil (shortening or butter) with sugar with a mixer.
- Add eggs, buttermilk and bran in water to the creamed mixture.
- In a separate bowl, mix together the flour, salt and baking soda.
- Change to a larger bowl and combine flour and creamed mixture together and then add the Kellogg's All Bran cereal. Stir until moistened.
- Add mixture to covered jars in the refrigerator indefinitely… (or so Annie says!) Seriously, this mix will not last long if your family is like mine!
- When ready to use, add mix into buttered or spray oil prepared muffin tins and bake in a preheated oven at 400° for 12-15 minutes. If making larger muffins, about 17 minutes works for me.Just a note…refrigerated mix when it's cold takes longer to bake.TIP: Use a scoop to keep all the muffins the same size.
- NOTE: These muffins may be added to freezer bags and frozen so that they are ready for a warm up in the microwave. Makes for easier mornings. Just make sure that you label if you have added other ingredients to specify the type.
Muffin Variations
- The easiest way to change these muffins is to add a small amount of muffin mix to the muffin tins and then add a sprinkle of dried cranberries; frozen or fresh fruit; berries; chocolate chips, grated apples or applesauce, granola or mashed banana and pecans or walnuts. A tablespoon of mixtures in the middle usually works. Suit your tastes with each type to have so many variations of muffins until you find your favorite.Top with more muffin mix.
- Feel free to sprinkle the tops of muffins with a bit of your favorite granola or a mixture of sugar or brown sugar with cinnamon. A mixture of 1/2 C sugar with 1/4 t cinnamon is an easy topping to add.
- Bake as directed above.
Notes

Ready to add to your refrigerator to bake right before breakfast; or bake ahead and add to your freezer for a microwaved muffin.

Make ahead and add to the refrigerator when guests arrive. So easy! We love the blueberry with cinnamon and sugar topping…but, it’s great with mashed banana and pecans. I’m trying some apples and pecans or walnuts next. I guess I’ll bring a jar when I see you next, right?!!
