Do You Need a Great and Easy Trout Recipe for Lent?

Is that you? Asking for more fish recipes for Lent? I heard you and have I got the easiest way to cook steelhead trout or salmon for you. It’s delicious and it is so perfectly healthy! When you are a Kentucky girl, fried catfish or canned tuna salad (like the chicken salad I shared) or salmon patties were what we grew up having…so, I have loved adding fresh salmon and trout into my meal planning now.

I have used this recipe for salmon for many years, but my husband is just not a salmon lover and I can’t possibly consume that much when it’s cooked; so, steelhead trout came into the picture.

Now, I have a son who is a steelhead trout genius and I’ll be sharing his recipes over here in the future…

But, I did promise EASY, right? You got it.

What I have learned with fish is buying the freshest and cleanest fish that you possibly can is important. I have researched it and you probably should, too. The fish in my area is always shipped in, so I watch and read carefully to ensure that what we are eating is the best. Bright color is important, too.

Once you have found that steelhead trout, or salmon if you prefer, as fresh as possible, all you need next is lemons, sliced thinly, and your favorite multipurpose or seafood seasoning with a little bit of olive oil.

Prepare trout with lemon

I lay a piece of parchment paper on my cooking sheet and begin to place thinly sliced lemon on the area directly under that fish.

Add the trout or salmon on top of those lemons, skin side down, and then I drizzle with a little bit of olive oil. Then cover with your favorite seasoning. I have so many favorites for these, but look for one that’s for seafood or has garlic, lemon, salt, pepper…you get my drift.

Add more lemon slices on top and add that to a preheated 400 degree oven for about 15-20 minutes until the internal temperature is a safe 140-145 degrees for trout. (Salmon safety temperature is about 145 degrees, and be careful to make sure any pin bones are removed before cooking it.)

Ingredients
  

  • 1 steelhead trout
  • 3 lemons, sliced thinly
  • 2 T olive oil
  • favorite seasoning

Instructions
 

  • Preheat your oven to 400 degrees.
  • Lay parchment paper on the cooking sheet that will fit your fish.
  • Slice lemons thinly and place onto the parchment paper where the fish will be laid.
  • Lay the trout on top of the sliced lemons.
  • Drizzle the trout with olive oil and sprinkle with your favorite seasoning.
  • Top with a few more lemon slices.
  • Place into the preheated oven for about 15-20 minutes until thickest part of the trout is between 140-145 degrees internally.

This is a great and healthy main course that your family will love, especially during the lent season! 
It is great served with fresh roasted veggies.. Enjoy!
