BEST Seafood Frittata for an Elevated Brunch
Are you like me and wish you were on vacation at the beach right now? Perhaps you have time at the beach planned for spring break or summer vacation. With that in mind, how about a great seafood frittata recipe? Perfect when you want brunch a little elevated, right?
But, when there is a time of celebration or brunch gathering, my mind goes to a quiche or frittata.
Seafood reminds me of strolls on beaches which can vary from beach visits in October, April, or January. I mean really, any trip to Florida’s gulf coast is ALWAYS a favorite.
We are all about brunch here and since we love seafood so much, why not add seafood to the menu, right?
That’s what I did.
It began with a basic frittata recipe.
You can go as elegant or as simple as you wish with the choice of seafood from lobster, surimi, shrimp or crab.
With citrus and fruit added to the plate, you have the PERFECT brunch menu.

Seafood Frittata
Are you a seafood lover? Which would you choose to add to this dish?
Pay no attention to the partially zested lemon in the photo. And since surimi was easier to find, that’s the seafood that was the choice for this frittata. My friend, Ro, who shared her crab cake recipe, gave me that tip.
I love that this one has diced potatoes, green onions and peppers that give it a colorful look with great flavor.
Lemon added always helps remove the “fishy” smell and flavor that often accompanies a seafood dish. Don’t skip this ingredient!
Choose which fresh herbs compliment the type of seafood you add. Fresh basil or parsley are favorite additions here.
Seafood Frittata
Equipment
- 1 ovenproof, nonstick skillet
- 1 Stove
- 1 cutting board
- 1 knife
- 1 set Measuring cups/spoons
- 1 zester or grater to zest lemons
Ingredients
- 2 C seafood- lobster, crab, surimi or shrimp, cooked and cut into small pieces
- 4 T butter
- 2 C Yukon potatoes, peeled and finely diced
- 1/2 C red pepper, finely chopped
- 1 whole green onion, finely chopped
- 2 T fresh basil or parsley, chopped
- 8 large eggs, beaten
- 1 zest lemon
- salt and pepper to taste
- 1/2 C Parmesan cheese, grated
Instructions
- Preheat the oven to 350°.
- Prepare all ingredients.
- Melt butter in ovenproof skillet. TIP: Nonstick is helpful with a frittata for easy removal.
- Add the potato, bell pepper, and green onion and saute' until tender.
- Salt and pepper to taste.
- Top with your favorite seafood.
- Sprinkle with fresh herbs and lemon zest and pour the eggs over the mixture in the skillet.
- Sprinkle the surface with cheese.
- Cook over medium heat on the stove until beginning to set around the edges, but do not stir.
- Place skillet in preheated oven and bake until eggs are set and golden–about 20 minutes.
- Let set a few minutes before cutting and removing from pan. Serve while still hot. Feel free to garnish with more fresh herbs.

I’m making this tomorrow for a Mother’s Day brunch with a friend who needs a little extra attention. I plan to prepare all of it except the eggs and cheese beforehand, then we’ll have our special stroll through lilac gardens, and I’ll finish it off later with a mimosa in hand.
