Anyone for Black Forest Muffins?
For many years I taught foods classes. Many feet were under tables there. To learn. Attempt to cook. And laugh. But, most importantly to EAT. When this recipe for a quick bread appeared on my planner, I was prepared for success. All I had to say was “Black Forest Muffin” and it seemed
everyone recognized the recipe.
You see, when the smell flooded the hallways, former students, teachers and students I had never had appeared outside the doorway. Always, begging for a Black Forest muffin! Since each lab student was the benefactor of 2, it was up to them if they could part with any!
It had a reputation that preceded semesters for those who had wafted down the hallway past the lab.
So, today, I celebrate those hundreds who sampled them. Who prepared them. Those who loved them. Here’s to you!
Pay no attention to me baking them today. I have just simply missed making these with those incredible high schoolers.
My family will love me. But, today, perhaps my neighbors and friends may be the ones who love me more when I appear for deliveries.
That’s kind of what’s happened here. Cooking is my outlet. Gifting helps keep me stay “healthy focused” amidst all that happens here. Plus, it simply does my heart good.
So, here’s to you today friends and former students who follow me here! One of the famous recipes that probably caused the majority of the student body to sign up for my classes. Reflecting back, I’m sure they loved me…but, perhaps the recipes that overflowed with abundance from that culinary lab were the true drawing card!
Black Forest Muffins
Equipment
- oven
- microwave
- muffin tins
Ingredients
- 1 stick butter
- 3 1 oz. squares unsweetened chocolate, chopped
- 1 C. sugar
- 1 egg
- 2 t. vanilla
- 1/4 t. salt
- 1 C. buttermilk
- 2 C. all purpose flour
- 1 t. baking soda
- 1 6 oz. pkg. semi-sweet mini chocolate chips
- fresh cherries, stems & pits removed OR cherry pie filling, optional
- 1 16 oz. can cherry pie filling if you choose not to use fresh cherries
Instructions
- Preheat oven to 400 degrees.
- Line muffin tins with 12 liners or grease them. Set aside.
- Combine butter and chopped unsweetened chocolate in a microwave safe bowl.
- Heat on high for 2 or so until the mixture is melted and smooth when stirred.
- While the mixture is cooling to lukewarm, in a separate bowl mix together the flour and baking soda.
- Once the mixture has cooled to a lukewarm temperature, stir in the sugar, egg, vanilla, salt and buttermilk until well blended.
- Gradually add the flour mixture into the chocolate mixture, stirring until combined. Stir in the chocolate chips.
- Spoon batter into the muffin cup, approximately half full. ***If desired, spoon 1 t. of cherry pie filling OR one pitted cherry into the center of each cup and cover with remaining batter.
- Bake for 15 minutes. Don't overbake or they will be dry!
- Let the muffins cool in pans for 5 minutes and then transfer to cooling racks.

I had feet under my table. Family. A gathering “send off” for my sister. Her grands inhaled these! Face first! Headlong into the plate! For all chocolate lovers out there…it doesn’t get much better.
We are entering the chocolate season. Perfect for Valentine’s Day gifting. Celebrating.
And if you can’t have feet under your table, don’t forget to move your table somewhere else where others may enjoy them! Enjoy! With or without the cherries!

like a good cook, i read my recipe before getting started. but i am baffled–where does the egg enter the mixture? the ingredients call for 1 egg, and i have read & reread the instructions and don’t see where the egg is used. please advise. thank you.

Goodness!Thanks for catching that! I have updated it in the recipe if you want to save it! You add the egg with the sugar, vanilla, salt and buttermilk step. Thanks for letting me know I had left it out! You are a lifesaver for sure!
