A GREAT Taco Soup Recipe!
Do you love a great taco soup recipe? Perhaps in the crockpot? This one will work in your stockpot, Dutch oven OR your crockpot. Yet, it’s so fast and easy that I chose to skip the crockpot this time and have a great batch of taco soup ready in my Dutch oven in less than an hour. This one is SOOOO delicious that I had to share it with all of you.
Remember last week when I shared the taco seasoning recipe for those taco lettuce wraps that I shared in the Vue magazine?
Today, the seasonings came out to add to more packets for the pantry and my husband’s plea for soup was heard in the background. You know he loves soup.
A Taco Soup recipe became my focus.
Why not use what I had in the pantry and freezer to create a new and great version?
- ground turkey
- sweet onion
- one packet or recipe of taco seasoning
- tomato juice
- tomatoes
- black beans
- chili beans
- corn
Just dice your onion and add with the ground meat (your choice- I chose turkey so that I didn’t have to drain) to a Dutch oven. Sprinkle with the seasoning mix and brown together.
Next, drain and rinse the black beans.
Then add the rest of the ingredients to the pot and finish cooking.
Serve with all of your favorite toppings.
The taste test was heavenly.
So how easy was that? Delicious servings of taco soup scooped into bowls and topped with tortilla strips, sour cream and cheese.
The only thing that would have made it better was fresh avocado and cilantro. Both of those ingredients are NOW on the grocery list for the next bowls served.
Meanwhile there was a delicious taco soup recipe created that made my husband so happy. I wasn’t complaining here either.
It made all of us happy!

Delicious Taco Soup
Equipment
- 1 dutch oven
- 1 Stove
- 1 can opener
- 1 knife and cutting board
- 1 strainer
Ingredients
- 2 lb ground turkey, chicken or beef
- 1 1/2 C sweet onion, diced
- 1 pkg taco seasoning mix use my recipe
- 4 C tomato juice
- 4 C canned tomatoes
- 1 can black beans, drained and rinsed
- 1 can pinto chili beans
- 2 C frozen, whole kernel corn
- garnishes: sour cream, cilantro, diced green onions, grated cheese, avocado and/or tortilla strips.
Tortilla Strips
- 5 small corn tortillas
- 1 T olive oil, in spray bottle
- salt
Instructions
- Gather your ingredients.
- Add ground meat to Dutch oven and add diced onion. TIP: Ground turkey needs no draining grease from meat after cooking.
- Add taco seasoning and cook meat and onion.
- Add tomato juice, tomatoes, black beans, chili beans and corn and cook to heat.
- Simmer until heated through and desired consistency.
- Serve with your favorite garnishes: sour cream, cheese, cilantro, avocado, tortilla strips, and/or green onions.
Tortilla Strips
- Preheat oven to 375°.
- Cut corn tortillas in 1/2" strips and add to a parchment lined baking sheet with sides in a single level.TIP: Pizza cutter is great for this task.
- Add olive oil to a sprayer and spray tortilla strips and sprinkle with salt. If you don't have a sprayer you can add to a bowl and drizzle with olive oil. NOTE: Using a bowl may cause strips to break apart more than a sprayer.TIP: Lime Sea Salt is a favorite one to use with these.
- Add to the oven and bake for 5-10 minutes and then turn over and bake for another 5-10 minutes until desired crispiness.Feel free to spray oil and sprinkle with salt again when you turn them over.
- Add to soup or store in an airtight bag or container until needed.

This taco soup recipe is a new one to be added that includes all fresh ingredients. From last summer’s bounty…tomatoes, tomato juice, and corn that I canned/froze. A win was a taco spice mix that was created from pure spices with no additives. Then ground turkey that had no hidden ingredients along with fresh onion and canned beans from the pantry were perfect additions.
Fresh toppings elevated the flavors of this taco soup to make it a new favorite.
