A Great Taco Ring

Let’s start at the very beginning…a very good place to start. Many years ago, I enjoyed my role as a Pampered Chef consultant. It was during busy days of teaching, but gathering with friends, creating great recipes and sharing them were always a favorite. As grandparents day is celebrated this month, and fall gatherings are beginning, what better time than to share a sweet story about one of their most loved recipes, the taco ring…

You see, I have four beautiful grands. Although they may be here during the year at some point…the location of Los Angeles, now Boise, and Atlanta, have prevented those littles from sharing the kitchen with me to create great recipes and time together.

But, that Taco Ring changed it all.

Our oldest grandson loved to cook with his mom. At the time, he wanted to cook with me…and so we worked out his selected recipe, a time that worked and a Skype call to cook together.

His choice? The taco ring.

And so it began. I felt like Jennifer Garner’s pretend cooking show with her mom. Questions asked, my daughter in law guiding on the other end of that phone conversation.

What a great way to share life with the littles in your life that you don’t see often. Sharing something to love, now using FaceTime or Zoom to accomplish that goal.

Of course, there was baking time, but that little chef pursued on, and for both of us it was memorable.

Plus?

We both loved the recipe.

So, why not share my updated version of an old classic with you, right?

Taco Ring

A simple mixture of ground beef, with a bit of diced peppers and green onions browned together. Then an addition of taco seasoning–homemade or purchased–along with cheese to create the center of the ring.

Added to the center of crescent rolls, forming the ring, and folded in and baked, provides the perfect offering for an weekday entree or a weekend appetizer for gathering.

Perfect for teens, college gatherings, football parties, birthdays, or just a quiet evening at home.

Maybe even a replacement for taco Tuesday.

So…here’s my latest version. Don’t forget to provide all of your favorite toppings to make this taco ring over the top! Black olives, lettuce, chopped tomatoes, salsa, sour ceam, or peppers.

Fall Taco Ring

An updated version of the traditional Pampered Chef taco ring that's perfect for fall gatherings to serve as an entree or an appetizer.

Equipment

  • 1 Baking stone or sheet
  • 1 Skillet
  • 1 cutting board and knife
  • 1 measuring cup set
  • 1 Stove

Ingredients
  

  • 1 lb ground beef, lean
  • 1 pkg taco seasoning
  • 1/4 C orange, red or yellow bell pepper, diced
  • 1/4 C green onion, diced
  • 1 C Cheddar cheese, grated or Monterrey Jack
  • 2 T water
  • 2 8 oz pkgs Crescent rolls
  • 1 medium bell pepper or more to hold toppings
  • 1 C salsa
  • 1 C sour cream
  • 1/4 C black olives, sliced
  • 3 C lettuce, shredded

Instructions
 

  • Preheat oven to 375℉.
  • Add ground beef to a skillet, and brown, stirring to break up to small pieces.

  • Add diced bell pepper and green onion and cook a few minutes to soften.

  • Drain excess grease from beef and add beef mixture to a mixing bowl.

  • Stir in taco seasoning and water. Then add cheese to mixture. Set aside.

  • On a round baking stone OR baking sheet lined with parchment paper, place crescent rolls that have been separated into triangles into a circle with wide ends overlapping and points of the triangles toward the outside.
  • There should be a 5" circle in the center when all of the rolls have been overlapped to form a circle.
  • Use a scoop to add the meat mixture into the center of the rolls.

  • Wrap the crescent rolls over the taco meat mixture by bringing the pointed ends of the rolls over the meat and tucking in under the wide ends in the center.
    NOTE: The filling will not be completely covered.

  • Add ring to preheated 375° oven and bake for 20-25 minutes or until golden brown.

  • Let cool a few minutes before transferring to the serving tray.
  • While the taco ring is baking, create serving dishes out of peppers by cutting off tops, scooping out seeds and making V shaped edges around the tops.

  • Chop up lettuce to surround the taco ring and serve as a topping when serving.

  • Move the taco ring carefully to your serving tray. Surround with your toppings.

  • Fill peppers with your favorite toppings–salsa, sour cream. olives, cheese.
  • Slice more peppers to serve with the taco ring.

  • When you have finished adding your toppings, set out to serve!!

Notes

A quick and easy dish that is a show stopper. Whether using it as an entree or appetizer, this one is a crowd favorite.
