Your New Favorite Dip–Captain Rodney’s Cheese Bake
Several years ago I worked at a local shop…BBQ and more. THAT’S where I discovered the amazing Captain Rodney’s Cheese Bake. This is OUR favorite dip–and appears to be everyone else’s favorite if their feet have been under my table when this one is served!
Captain Rodney?
Well, I had the pleasure of meeting Captain Rodney when I went to market for that shop. He is a real, larger than life person!

But, that Captain Rodney’s Cheese Bake recipe?
None other dip can compare to this one.
Seriously.
It matters not how much I make of it…one, two, three or four recipes…for an event…it ALL gets eaten or taken home by guests.
Every. Single. Time.
Recipe requested, as well.
That happened at my husband’s birthday party last week.

Captain Rodney’s Cheese Bake
Equipment
- 1 oven
- 1 cutting board
- 1 chef's knife
- 1 baking dish
- 1 microwave
Ingredients
- 1/2 C mayonnaise
- 1 8 oz. cream cheese
- 1 1/2-2 C grated mild cheddar cheese
- 2 green onions chopped
- 10 butter crackers, crushed
- 8 slices bacon, cooked and crumbled
- 1/4 C Captain Rodney's Boucan Glaze
Instructions
- Preheat oven to 350°.
- Measure out all ingredients.
- Microwave cream cheese in microwave safe dish for a few seconds to soften.
- Remove roots from green onions and chop.
- Cook bacon, drain on paper towel and crumble.
- Crush crackers in a ziplock bag.
- In a mixing bowl, mix together mayonnaise, cream cheese, green onions, and cheese.

- Pour mixture into a greased pan.

- Top with crushed crackers. Add crumbled bacon on top and then pour glaze over the dish.

- Bake in preheated oven for 15 minutes.
- Serve with crackers.

Notes
JUST A NOTE: I realize the cost of that glaze has risen like so many products…but, a bottle will help you create 6 recipes of this favorite cheese bake. That averages a little over $3 per recipe for the glaze. I’ll take that!

After researching I see other recipes call for 1/4 cup to go into the mixture, then drizzle 1/4 cup over at the end. Is there a particular reason you only put the Rodney suace on top only? Thx!

The original recipe shared by Captain Rodney’s is the one that I have used for years. Feel free to add it to the mixture and on top, if you like. You simply can’t go wrong with that glaze!

Actually the recipe on the Captain Rodney’s bottle puts a 1/4 cup in the mix and drizzles a 1/4 cup on top at the end after cooking, which is why I asked you. I made your version and it was great. I was just wondering about your deviation from the original recipe on the bottle?
Original Recipe
Mix mayo, cream cheese, cheddar cheese, bacon, onions and 1/4 cup of CR glaze and place in pan. Top with crackers and bake 350 for 15 minutes. Top with more bacon and drizzle 1/4 cup CR glaze
Your recipe does not add glaze or bacon in mix, and puts glaze and bacon on top before baking in the oven.
I’m going to try the bottle recipe this time and see if it is tht different.

Ahh…I hadn’t looked at the bottle. My recipe was a printed one given to me by Captain Rodney one year at Market. You can see the printed version a bit in one of the photos. It only adds the glaze to the top. I think I actually added the glaze into the mixture one time not paying attention and it was delicious, too. Enjoy either way!
