Orange Loaf Blender Cake

Have you ever tried to make an orange loaf cake? I am all about a great loaf cake with a glaze. Are you? And I love citrus zest- lemon or orange for so many recipes. But the whole orange, just seeded? What? Let’s give this one a try.

But…an orange loaf cake made in a blender?

Yes, please. So you begin with greasing a loaf pan and getting all of the ingredients prepped.

Orange washed, quartered and seeds removed.

Measure ingredients.

Get out your blender. Add orange.

Add the ingredients to the blender as recipe directs…and then add blended batter to your greased loaf pan.

Preheat your oven to 350 degrees and you are on your way to the most delicious cake ever.

Bake in preheated oven for 55 minutes or until cake tester comes out clean. Let rest for about 10 minutes before removing from the pan.

Use that cooling time to make your glaze.

Pour the glaze over the cooled cake.

Oh, my goodness! This is a new one to make for breakfast or dessert for overnight guests. So delicious and moist! Switch out the flour for gluten free, if needed for guests.

Orange Blender Loaf Cake

A moist orange loaf cake made in a blender. So quick, easy and delicious!

Equipment

  • 1 blender
  • 1 set measuring cups/tools
  • 1 paring knife
  • 1 loaf pan
  • 1 oven
  • 1 cooling rack

Ingredients
  

  • 1 large navel orange- washed, quartered and seeded
  • 4 large eggs, room temperature
  • 3/4 C olive oil
  • 1/4 C sour cream
  • 1 1/4 C sugar
  • 2 t vanilla
  • 2 C all purpose flour OR 2 1/4 C gluten free
  • 1/2 t salt
  • 1 T baking powder

Glaze

  • 1 C powdered sugar
  • 2 T orange juice

Instructions
 

  • Preheat oven to 350°.
  • Grease 9 x 5 loaf pan. Set aside.
  • Measure all ingredients.

  • Wash, quarter and seed on navel orange and add to blender.

  • Add eggs, olive oil, sour cream, sugar and vanilla to the blender. Process until smooth. Be careful not to over blend.

  • In a separate bowl, mix flour, salt and baking powder.
  • Add dry ingredients to blender, pulsing a few times to just incorporate ingredients into the wet and not overmixing.

  • Pour the batter into the greased loaf pan and place in the preheated oven.

  • Bake for 55 minutes or until top is golden and a cake tester comes out clean.
  • Let the cake rest for at least 10 minutes before removing from the loaf pan. Continue to cool completely on a cooling rack.

  • While cake is cooling mix glaze ingredients. Pour over cooled cake.
    NOTE: feel free to add more powdered sugar if glaze needs to be thicker.

  • Feel free to add more orange zest, if desired.

Notes

A moist and delicious orange loaf cake made in a blender. Delicious for dessert, breakfast or an afternoon snack.
