Martha’s Vineyard Inspired Asian Soba Salad

Last week was a glorious week of views and sights from Martha’s Vineyard. Mother’s Day ended with a heavenly Martha’s Vineyard Asian Soba Salad at Black Dog Tavern.

If you are ever at Martha’s Vineyard…the Black Dog Tavern at Vineyard Haven is a favorite spot.

Martha’s Vineyard inspired salad did not disappoint.

Heavenly.

The perfect ending to a great Mother’s Day celebration.

You see.

My brother gifted us a trip to the Vineyard that they couldn’t take. What a win, right?

I had hosted him, my sister-in-law and 6 others from Japan the week before and he knew their visit had left my heart full but my tank a bit empty.

Rejuvenation prescription accepted.

You see…I’m not really a touristy girl. I love to blend in with locals, feel like I am not the “tourist”, and get a true feel of a place as we visit. The atmosphere, beauty, and climate unspoiled by the busyness of tourist season.

Now, let me tell you there are amazing reasons to visit Martha’s Vineyard on the off season.

  • Less tourists.
  • Little traffic.
  • Beautiful weather.
  • Available seating on places open.
  • No waiting in lines.

On the other hand, there are other drawbacks to not visiting from Memorial Day to Labor Day.

  • Shops are closed.
  • Restaurants shuttered.
  • Businesses still asleep from winter.

We met many people coming to “open” homes for the season. Turning water back on; utilities back in place; planting of flowers; and traveling to and from on the ferry.

But, limitations meant car rental and trying to navigate places to eat that were open. Our research and recommendations were not truly possible with that in mind.

I’ll save those tips for another share…

But, for now?

The remake of that glorious Asian soba salad in case you are like me and won’t be traveling back to Martha’s Vineyard anytime soon.

Martha’s Vineyard Black Dog Tavern Inspired Asian Salad

A delicious soba noodle salad tossed in a ginger dressing topped with red cabbage, carrots, broccoli, tomatoes, edamame, bell peppers with green onions and toasted sesame seeds.

Equipment

  • 1 Stove
  • 1 Large pot
  • 1 strainer
  • 1 knife and cutting board
  • 1 large bowl
  • 1 small bowl
  • 1 Whisk
  • 1 set Measuring cups/spoons

Ingredients
  

  • 8 oz soba noodles, cooked
  • 1 C red cabbage, thinly sliced
  • 1/2 C edamame, shelled and cooked
  • 1 C cherry tomatoes, halved
  • 1/2 red bell pepper, diced
  • 1/2 C cucumber, thinly sliced
  • 1 C carrots, grated
  • 1/2 C broccoli florets
  • 2 T cilantro, chopped
  • 1/4 C green onions, finely sliced
  • 2 T sesame seeds, toasted

Dressing

  • 3 T soy sauce or less to your tastes.
  • 2 T sesame oil
  • 1 T rice vinegar
  • 1 T honey
  • 1 t ginger, freshly grated
  • 1 T smooth peanut butter, optional Not included in the original inspired Martha's Vineyard Black Dog Tavern dressing.

Instructions
 

  • Bring a large pot of water to boil and add soba noodles and cook according to package directions- typically 4-5 minutes.
    Rinse under cold water to stop cooking and drain.
    Set aside.
  • Blanch broccoli florets until bright green for 2-3 minutes and immerse in ice water for a couple of minutes.
    Cut into tiny florets that give ease to eating. Set aside for assembly.
  • Shell, and cook edamame for a few minutes in boiling water. Run under cold water to cool, drain and set aside.
  • Toast sesame seeds for a few minutes in a 375℉ oven. Set aside to cool.
  • Prep all other vegetables for the salad.

Dressing

  • In a small bowl, whisk together the dressing ingredients.

Assemble Salad

  • In a large bowl, combine the cooled soba noodles, cabbage, edamame, tomatoes, bell pepper, cucumber, broccoli, carrots, cilantro and green onions.
    TIP: The Martha Vineyard inspired recipe does not include peanut butter in the dressing. Feel free to add that in if it's to your taste.
  • Stir in dressing and top with toasted sesame seeds. Feel free to serve with toasted or fried pita chips.

And by the way…Black Dog Tavern AND Black Dog Bakery Cafe were by far our favorite restaurants on Martha’s Vineyard. The others open while we were there were no comparison.

    Looking forward to making this salad. It sounds light & fresh, but filling. I haven’t used edamame beans before & as you mentioned, I’ll add the peanut butter. Martha Vineyards sounds like a place we all should visit. Thank you again!

      Hope you love this version…and if you have a chance to visit Martha’s Vineyard, it’s well worth the visit. Next time just a few days with a car will probably be enough to breathe in all the island and indulge in Black Dog Tavern and Bakery Cafe favorites.
