My Favorite Meatloaf

This recipe is a reminder of my Mother's meatloaf. I love to divide into mini loaves and place in the freezer for future meals. Enjoy!

Ingredients
  

  • 2 lbs turkey, beef or mixture with Italian sausage
  • 1/2-1 C onion, chopped your preference
  • 1 egg
  • 1/2 C old fashioned oats
  • 1/2 C tomato ketchup
  • 1/4 C light brown sugar, packed
  • 1/4 t. dry mustard, for glaze
  • 1/2 C tomato ketchup, for glaze
  • 1 T light brown sugar, for glaze
  • Salt and pepper to taste
  • 1 T Worcestershire sauce, optional

Instructions
 

  • Preheat oven to 350 degrees. Grease pans.
    ***The types of pan are your choice. I have used square baking dishes, cast iron skillets and loaf pans for this.
    ***Feel free to use mini loaf pans if preparing to freeze.
  • Add 2 lbs. preferred meat to a large mixing bowl. Turkey or beef, (even add Italian sausage, if desired). Salt and pepper as desired.
  • Chop onion, 1/2-1 C, your preference, and add to bowl.
  • Add egg, brown sugar, oats and ketchup and mix together well.
  • Add to baking dish(es).
  • Mix together the dry mustard, ketchup and brown sugar for glaze and spread on top of the meatloaf.
  • Bake at 350 degrees for one hour. (may vary with pan sizes)
  • If meal prepping for future meals, let cool completely before wrapping and freezing.

Notes

If the sugar amount is too much for your dietary concerns, feel free to reduce the brown sugar and ketchup in the meatloaf and glaze. And, remember to tuck these into the freezer for those days when Comfort Food is needed with little effort...Enjoy!
