Cut washed sweet potatoes into 1/4" rounds, leave peelings on.
Spread sweet potatoes onto a baking sheet and drizzle with olive oil.
Salt and pepper and sprinkle fresh rosemary over the potatoes.
Roast for 25 minutes in the oven.
Remove from oven and add to serving platter or bowl and drizzle with honey.
Serve immediately!
