Black Forest Muffins

A favorite chocolatey muffin that has been a favorite for years...with or without cherries!

Ingredients
  

  • 1 stick butter
  • 3 1 oz. squares unsweetened chocolate, chopped
  • 1 C. sugar
  • 1 egg
  • 2 t. vanilla
  • 1/4 t. salt
  • 1 C. buttermilk
  • 2 C. all purpose flour
  • 1 t. baking soda
  • 1 6 oz. pkg. semi-sweet mini chocolate chips
  • fresh cherries, stems & pits removed OR cherry pie filling, optional
  • 1 16 oz. can cherry pie filling if you choose not to use fresh cherries

Instructions
 

  • Preheat oven to 400 degrees.
  • Line muffin tins with 12 liners or grease them. Set aside.
  • Combine butter and chopped unsweetened chocolate in a microwave safe bowl.
  • Heat on high for 2 or so until the mixture is melted and smooth when stirred.
  • While the mixture is cooling to lukewarm, in a separate bowl mix together the flour and baking soda.
  • Once the mixture has cooled to a lukewarm temperature, stir in the sugar, egg, vanilla, salt and buttermilk until well blended.
  • Gradually add the flour mixture into the chocolate mixture, stirring until combined. Stir in the chocolate chips.
  • Spoon batter into the muffin cup, approximately half full. ***If desired, spoon 1 t. of cherry pie filling OR one pitted cherry into the center of each cup and cover with remaining batter.
  • Bake for 15 minutes. Don't overbake or they will be dry!
  • Let the muffins cool in pans for 5 minutes and then transfer to cooling racks.

Notes

When I taught foods classes, THIS was the recipe that everyone loved! 
I found that there were many who liked the simple chocolate muffin much better without the cherry  OR pie filling that makes them the "Black Forest" inspired muffin.
Your choice! Either way they are divine if you are a chocolate lover.
