The Best Rotisserie Chicken Salad Recipe
Are you a chicken salad lover? This week found me with needing lunch in a hurry and a rotisserie chicken in the fridge. With a few other ingredients on hand, this easy rotisserie chicken salad recipe provided the perfect lunch. It was too good not to save as a perfect and easy recipe when there are feet under your table for a gathering.

Who doesn’t love a great rotisserie chicken from Sam’s Club or Costco?
It’s a staple here.
An apple, green grapes, mayo, pickle relish, some romaine lettuce and chopped pecans were in my fridge and pantry.
Perfect addition to that chicken to make a great chicken salad, right?
So, here’s the recipe:
Sweet Rotisserie Chicken Salad
Equipment
- 1 cutting board
- 1 knife
- 1 Mixing bowl
- 1 set measuring cups
Ingredients
- 1 boneless, skinless, rotisserie chicken breast, cooked and cut into bite sized pieces
- 1/2 C mayo or Miracle Whip, or more to taste
- 1 T pickle relish
- 1/4 C green grapes, cut in half
- 1 apple, cut into bite sized pieces
- 1/4 C white raisins
- 2 T chopped nuts- pecans or walnuts, optional
Instructions
- Chop boneless, skinless rotisserie chicken breast in bite sized pieces.
- Core and cut up apple into bite sized pieces.
- Cut grapes in half.
- Measure ingredients.
- In mixing bowl, simply mix chicken, apple, grapes, relish, mayo, raisins, and nuts.
- Add to lettuce leaf and serve with your favorite crackers.
