I was so excited to get my first pint of locally grown strawberries today that it called for a great salad recipe. Anybody ready? Truly so easy. Quick and delish! Now if you want to make it easy, you can simply top with your favorite dressing; but, I have included a quick and easy dressing that is the perfect compliment to the baby spinach and fresh strawberries. I also toasted some pine nuts in a dry skillet and added those to the top. Yum! I am all about a great salad that takes advantage of what’s in season. I’ll be adding more as the harvest of great vegetables and fruit begin to appear. Enjoy all of the bounty of spring. Look for new ways to prepare and serve and enjoy produce! A new salad is always a win as we launch into spring. I’m trying new things so be watching for new recipes and from more spring bounty! Getting pretty excited. Now, if those freeze warnings would just stop! What spring recipes are you creating? Salads recipes that are keepers? Recipes that showcase strawberries?
