OH, MY! Now, I realize it begins by using another recipe that I have already shared with you…candied jalapenos. Many people use the term “cowboy candy” for candied jalapenos. Whatever you call them, they alone are amazing added to cream cheese for a perfect appetizer. If you have some of those in your pantry to use? You are GOLDEN! If not, Walmart carries them. Just click on the link to shop. Luckily, I still had 3 jars left to begin this creating…and boy am I glad I did. Right now, jalapenos are overflowing in gardens and farmers’ markets. Pineapple is the star of this Pineapple Jalapeno Jam A fresh pineapple…make sure it smells wonderful and is not too hard when you make your selection. Sugar, of course, with 4 oz of candied jalapenos, fruit pectin, lemon juice and red pepper are all that you need for this rock star recipe. Adding the recipe to 4 oz. canning jars makes the perfect amount to pour over or whip into 8 oz softened cream cheese.
