					<description><![CDATA[<p>I don&#8217;t know about you&#8230;but, there&#8217;s never enough of me to eat bananas that I buy before they go bad. I only bought three. Trying to think ahead. For those of you that know me, you know my husband is allergic to all raw fruits and vegetables which has always made buying things he can&#8217;t eat a challenge. Walmart&#8217;s run added bananas to my basket. You know the drill of what happened don&#8217;t you? Hence came the need to create a banana nut bread. Overripe bananas provides the need for a banana nut bread recipe. I have shared a banana bread recipe here before, but that one began with 3 overripe bananas. And today? There were only 2 to use. If you know, you know. ONLY overripe bananas can be used for banana bread. Thumbing through my old recipes brings me to ones where all of the ingredients aren&#8217;t added&#8230;sometimes the type of baking pan is left out&#8230;and then there&#8217;s often no instructions at all. SO? Here&#8217;s where I began. Truly, if you find yourself with two overly ripe bananas in your home? More than likely you will already have things in your pantry and fridge for this recipe. So easy. AND did I mention delicious? Very little prep time. Quick bake time. It even freezes well. Perfect recipe to solve my banana bread problem. Just begin by peeling and mashing those bananas with your mixer. Next, whisk together your dry ingredients in a separate bowl. Then, add the dry ingredients, vanilla, and melted butter to the bananas&#8230;mixing slowly with your mixer. If you choose to add nuts, add them last. How simple is that? Just grease a loaf pan and add the batter to the pan. Add to a preheated 350 degree oven for about 55-60 minutes or until a cake tester comes out clean. That&#8217;s it. Just let it cool for a few minutes before removing from the pan. Honestly? You could make smaller loaves for gifts or even add to muffin pans for a perfect portion size for breakfast guests. If your family or guests aren&#8217;t a fan of nuts? Just leave them out. And if they love chocolate chips? Here&#8217;s another version I have shared that everyone will love. Overripe bananas give us the perfect opportunity to create a wonderful addition for breakfast or brunch. So&#8230;if you find yourself with only two overly ripe bananas that need to be saved, here&#8217;s your recipe! My new neighbors received this loaf warm from the oven. Hope they loved it! and that you do, too. And on a humorous note&#8230;the slices you see in the photo? One for a taste test and the other for my husband to taste? My husband, who has NEVER liked banana nut bread proclaimed this recipe ridiculously good&#8230;a great seal of approval! Don&#8217;t mind me&#8230;I may be buying more bananas just to save them two bananas at a time&#8230; Happy Baking!</p>
