Save THIS Chicken Divan Recipe!
Have you ever enjoyed chicken divan? A wonderful one dish casserole that adds favorite flavors and comfort all in one divine recipe. My first remembrance of this dish was at my best friend’s wedding reception. But, this chicken divan was a little different. The chicken recipe served there was served in a wonderful pan and so we have always called it “chicken divan in a pan”.

Chicken with an amazing cheesy sauce.
The recipe that I am sharing today isn’t that exact recipe or one that I have used for years.
But, a recipe in one of my really old cookbooks caught my eye.
Isn’t it the best when you have ALL of the ingredients in your pantry or fridge?
Yep.

Fresh lemon juice with the mayonnaise, cheese and broccoli takes makes the difference in that recipe.
With this Chicken Divan recipe?
It began with broccoli, lemon juice and mayonnaise in the ingredients list.
Add in a bit of curry, chicken, cream of chicken soup and cheese with a buttered bread crumb topping… and I knew this one would be great!
Have you ever wondered what different parts of a casserole do and if you can exclude any?
Casseroles have different components and here’s what they each do:
- Protein-meats and eggs act as the main ingredient to an entree casserole. They provide the filling that give flavor and heartiness to the dish.
- Vegetables offer flavor, fiber and a nutritional value to the casserole.
- Starches, such as, rice, pasta, potatoes, bread or corn, provide a bit of thickener and help hold the casserole together. PLUS, they provide a sense of comfort food to the casserole.
- Lemon juice adds brightness to vegetables and mayonnaise based casseroles.
- Sauces that are often created with cream soups, mayonnaise, or sour cream hold ingredients together, provide flavor and moisture.
- Spices and Seasonings, such as the curry in this recipe, give great flavor to the overall casserole.
- Cheese is always a welcome addition to casseroles in large or small quantities to add flavor and creaminess.
- Toppings, such as the buttered bread crumbs, hold the moisture into the casserole, preventing it from drying out. Casserole toppings can vary from crushed corn flakes or potato chips, cheese, fried onion rings, bread crumbs, Panko and the list goes on.

Chicken Divan
Equipment
- 1 9 x 13 baking dish
- 1 set Measuring cups/spoons
- 1 Large Mixing Bowl
- 1 oven
Ingredients
- 4 C broccoli, cooked and chopped
- 2 lbs chicken breasts, diced rotisserie or cooked
- 2 cans cream of chicken soup
- 1 C mayonnaise
- 1 T lemon juice fresh is my choice
- 1 t curry
- 1/2-1 C cheddar cheese, grated
- 1/2 C bread crumbs
- 2 T butter, melted
Instructions
- Preheat oven to 325°.
- Measure all ingredients.
- Butter or spray with cooking spray a 9 x 13 baking dish.
- Cook broccoli and drain. Chop and add broccoli to the baking dish in a layer on the bottom.
- Dice cooked or rotisserie chicken and add to mixing bowl.
- Add soup, curry, mayonnaise and lemon juice to the cooked chicken and mix well.
- Pour chicken mixture on top of broccoli in the baking dish.
- Cover the top of the chicken mixture with an even layer of cheese.
- Melt butter and mix together with the bread crumbs. Sprinkle over the top of the casserole.
- Add baking dish to a preheated 325° oven and bake for 45-60 minutes until the mixture is bubbly and topping golden brown.
- Serve immediately.
Notes
This Chicken Divan can serve so many purposes.
If you have family or friends with new babies, surgery or in need of a bit of TLC…add this one to take for a wonderful one dish dinner.
I have a son who has always LOVED broccoli…so, this may be served next week while he and his family are home.

We have always loved chicken divan, but saved it to become turkey divan after the holidays. I have never used curry–Tony might like that addition!
