Roasted Sweet Potatoes…How I Love You!
A harvest of sweet potatoes is finding its way to my boxes from Hayco Farms. And a new way to prepare them quick and easy was in order! Roasted sweet potatoes have now found their way into my heart!
A quick and easy recipe that will win your heart!
When I was looking over my recipes, I decided to make one of my own. Several roasted sweet potatoes recipes had them cut into wedges or 1/2″ slices which doubled the baking time and required flipping halfway through. I thought, if I just made them 1/4″ thick rounds it would cut the baking time in half and require no flipping and it worked beautifully!
Here’s my favorite pan to bake them on.
I just spread those sweet potatoes onto the sheet, spray olive oil with my sprayer, salt and pepper, add the rosemary and bake!
Seriously! 5 minutes prep time! Just long enough to preheat that oven.
Don’t skip the rosemary, preferably fresh. It took the flavor over the top!
And that drizzle of honey! Wow! Perfection.
Roasted Sweet Potatoes
Equipment
- oven
- Baking Sheet
Ingredients
- Sweet potatoes, washed
- olive oil
- salt and pepper
- sprigs fresh rosemary
- honey
Instructions
- Preheat oven to 425 degrees.
- Cut washed sweet potatoes into 1/4" rounds, leave peelings on.
- Spread sweet potatoes onto a baking sheet and drizzle with olive oil.
- Salt and pepper and sprinkle fresh rosemary over the potatoes.
- Roast for 25 minutes in the oven.
- Remove from oven and add to serving platter or bowl and drizzle with honey.
- Serve immediately!

Didn’t I tell you that this was a quick and easy roasted sweet potato recipe?!!
It will be on my rotation for the next few months. Little time in that oven. Quick turn around and I can see it paired with so many entrees. I always have olive oil, fresh rosemary and salt and pepper ready when those potatoes are in season.
Can I tell you that the other winner was for this recipe? My husband LOVED it! It’s a keeper!
I love, too, that this is a basic recipe that can be made for just a few or in large quantities for a crowd!
I’ll be fixing these until the cool breezes of fall lull me back to the comfort food versions of those potatoes that need a casserole, sweet potato chili, a baked one, or even a pie.

Oh my word, this is exactly how I make them! They are the best this way. One time sprinkly a tiny, tiny bit of dark brown sugar. I only use the smallest dot and it’s amazing.
